No cinnamon?!? It's considered to be a major crime in my family to make an apple pie with no cinnamon therefore I did add it. We also thought it was too sweet and we didn't like the texture of the apples. I will try this recipe again and try a different apple and less sugar, hoping that less sugar won't change the liquid consistency. My husband thinks it should have lemon juice added. We liked how the pastry turned out with the sugar/water poured over top. That was a nice change but this recipe needs some changes before it's considered a winner with my family. I will try it again but my husband and I are still debating what changes to make so it's more to our liking. Jan 5/13 update. Used spartan apples, same amount of sugar but used fresh lemon juice instead of water. A much better flavor. Also, I agree with Julie when she says that people are making major changes then giving the recipe five stars. This is not a five star recipe, the changes are.

This bread is very light, great texture and a nice crispy crust but the cornmeal is much too crunchy, it's not cooked. I will make this terrific bread again but because we prefer cornmeal cooked I will soften the cornmeal first. I think if I soak the cornmeal in the warm water for a bit, re-heat the water/cornmeal mixture before putting it in the bread machine the results should be a "no crunch" cornmeal - I hope. I'm sure more water will be required if the cornmeal is soaked.

The only brandy I had was orange brandy. It was fabulous. I will be making this again for sure and will probably use the orange brandy again. Thanks for sharing the recipe.
