About this Cook
I am a wife, mom, missionary, singer, gardener, and at home chef. I love everything about creating beautiful and delicious meals. Cooking is a delight and a creative outlet for me. My life-long secret desire is to own a small restaurant where I would be chef as well as being able to interact with the guests. This would be a small place that caters to a few tables at a time. Maybe someday......
My favorite things to cook
Anything new and challenging. I would suppose my favorite dish to create is chicken corden bleu and another favorite would be Mexican mole poblano
My favorite family cooking traditions
One of my favorite things has been teaching my daughter how to cook. She is only 13 and made her first cherry pie when she was 11. It was so thrilling to me for her to make it 100% on her own, totally from scratch and then listen to the christmas dinner crowd rave over her pie. Yes, I took a back seat that day to her cooking but as a mom and as a teacher it was a thrilling moment to watch her excel in making my favorite family recipe!
My cooking triumphs
I would have to say the greatest feeling of accomplishment has been to cook a traditional meal for Mexican mothers and grandmothers and have them rave over my authentic and flavorful dishes. I suppose the greatest compliment came when one of these dear women said (in Spanish of course)"I want to learn to cook like Rachel does!" What a compliment coming from this wonderful Mexican woman who was chef to many guests at the hotel that she manages!
My cooking tragedies
After years of cooking success I decided to make my flavorful meatloaf using flax seed meal instead of bread crumbs (or my personal favorite crushed croutons.) I thought it would be a great way to get this healthy ingrediant into my family's diet. The meatloaf was horrible and no one could eat it. I never tried it again, although I think it could work with a small ratio of flax seed meal combined with bread crumbs or croutons. After that fiasco I was never brave enough to try it again!

Cabbage, Tomato and Onion Salad
This is a delicious salad and one that I will make again. I do disagree with the reviews that say to let it sit for a day. This is what I did and it turned sort of a sick grey. When I made the salad it was crisp and absolultly beautiful. I would say that maybe 2-3 hours in the fridge would bring out the flavors without wrecking the gorgious fresh color of the salad. I also added bell peppers along with the chilis because I wanted more color and less spice. All in all this was a very good recipe. I rate it five stars for the recipe and 3 stars for the reviews. ;)
