Pimiento Potato Salad

Reviewed: May 16, 2012
Replaced pimentos with red bell peppers, capers, and sun dried tomatoes. Also added a 1/4 tsp horseradish because I only had course ground mustard. Turned out to be AMAZING! Keeping this one!

Chicken Salad

Reviewed: May 9, 2012
I didn't have celery so I used dill pickles- my husband had it two days in a row! I usually can't get him to eat leftovers! Making this later I mixed it up a little by adding a touch of lemongrass, and some apples. I also used extra virgin olive oil mayo. This recipe freezes great but you may have to pour off some juice and refresh the sauce a little.

Cabbage Jambalaya

Reviewed: May 9, 2012
As a newly pregnant mom to be I'm on the look out for nutritious dishes that my family can eat. I replaced some of the brown rice with lentils and garbanzo beans for an extra healthy kick- and added crab meat- all great for baby development. It was delicious even without adding jambalaya spices!

Slow Cooker Maple Country Style Ribs

Reviewed: May 6, 2012
My husband is a rib fanatic being from Nebraska- "Go Huskers!" He told his family these were the best ribs he's ever had. I did use regular syrup as I didn't have maple on hand but they were wonderful!
