Banana Crumb Muffins

I followed the recipe exactly, and they were excellent. They went down a treat with co-workers. My husband loved them, and he usually doesn't like sweets. Will make again.

I followed the directions exactly, but the dough came out very gooey, and they were overly sweet, I could only eat half of one. I also tested them at work, and everyone there said too sweet. I liked the frosting, and the filling, but all together with the gooey sweet pastry, it was just too much. I thought they would be flaky-er. Based on other reviews, it may be something I did, so I may give them another go.

Broiled Tilapia Parmesan

I used low fat versions of the mayo and butter, and it was excellent. It was pretty easy to make, too. I made little "boats" out of tinfoil for each fish fillet, and transferred it to the plate in the boat. It kept the sauce from running all over the place. I’m going to try it on chicken next time.

Shrimp Enchiladas

My hubby loves mexican food, and boy did he love this one. I used frozen cooked shrimp, a little extra hot sauce and sprinkled some cheese on top. Will make again!

Penne with Spicy Vodka Tomato Cream Sauce

My family loved this recipe. It is so easy to make too. I used 4 tbs of low fat creme fraiche in place of the heavy whipping cream ( I didn't have any on hand). It still had a good creamy texture and the taste was wonderful.
