Roast Pork with Maple and Mustard Glaze

This was a hit! I made a few mods to cooking temp/time, preheated oven to 400, cooked 15 minutes uncovered. Basted, put lid on and lowered to 350 for 1.5 hours. Cooked to 160deg. Took out of oven, put on a plate and covered tightly with foil. Rested for about 10 min while I finished the rest of dinner. Had quite a bit of sauce in roasting pan so I thickened with a bit of cornstarch/water. Delicious! Served with scalloped potatoes that baked same time as the roast and a pan of oven roasted zucchini/peppers, which I did in oven after taking out roast. (turned up heat to 400 for a quick cook). Definitely will make again.

Garlic Prime Rib

I followed the directions, with slight mod. Browned in pan on top of stove, then put in crock pot on high for 3 hours to internal temp of about 140. perfect. Guests ate 3 servings. That's as good as it gets! Now I'll go clean last weeks chicken wing mess out of the oven and try again the regular way! :)

Easy Sausage Strata

Excellent, easy, and Enjoyed! A few mods just so I could use what I had on hand, bread was a herb foccia loaf that I cubed, meat was ground italian sausage and a bit of farmer sausage, added a small sprinkle of a gourmet italian seasoning, ground coarse salt and pepper, and used dijon mustard. baked for 40 min covered, 20 min uncovered, let sit 5 min before serving. It was well enjoyed and will make again, my adult son wants recipe!

BBQ Glazed Homemade Meatballs

Made a few changes, used milk and cooked burger patties on my stove grill slathered in sauce. For the sauce I reduced the sugar to 3/4 cup, didn't have liquid smoke so I substituted Worcestershire. Delicious. Loved by all.

Banana Muffins II

made 6 extra large muffins, I added 1/2 cup choc. chips to batter, cooked for 25 min. oh boy, were these good! moist and flavorishous!

Mouse's Macaroni and Cheese

Made a bit larger and did a few mods, made sauce larger, used just sharp cheddar as I don't use velvetta, added my touches to the sauce, a bit extra dry mustard, 3-4 drops worchestersire, 3-4 drops tabassco, 3-4 tidbits minced garlic and added extra cheese & extra milk to make it a soupy sauce. Mixed grated cheddar in with the pasta, added 2tsp melted butter to the seasoned breadcrumbs. Covered to bake, uncovered last 5 min to brown a bit, and then served pipping hot with our ham dinner! Delicious! Loved by all, even the fussy one!
