About this Cook
Author/Writer of humor books such as 'It's Always Windy On Trash Night!' and others. Trained to cook when I was 10 years old and never stopped. Live at the beach, Professional Voice Over Artist for 28+ years, Host of Coastal Cuisine
My favorite things to cook
Shrimp! Anything with shrimp. God's gift to the world! Foods with lots of raw vegetables. Raw, fresh and crunchy is how the veggies perform! I love to smoke foods. Kingly Smoked Salmon is what you'd want as your last meal. Seriously. I also love slow cooker foods that are more than just roast beef or soup. Ever tried stacked beefy bean enchiladas in a slow cooker?
My favorite family cooking traditions
Spiced turkey at Thanksgiving, Pickled shrimp, fresh vegetable salsa (not the tomato store bought stuff, cooking a full breakfast every Sunday morning to give my kids something to remember when they get older). I use 100 year old 'hand-me-down' recipies updated to ease the calorie burden and more healthy.
My cooking triumphs
I catered a wedding for 400 people. I am not a caterer.
My cooking tragedies
Served my mother-in-law Banana & Peanut Butter Stuffed French Toast I had raved about for months and grabbed seafood seasoning instead of ground cinnamon to sprinkle on the finished product. Wrong! Oops! I'll never forget the look of revulsion.

Chef John's Swedish Meatballs
Excellent recipe Chef! Tastes exactly like Ikea meatballs (which I am an addict for). Nice!

Chef John's Twice-Baked Potatoes
EXCELLENT! Followed exactly. Perfect! I never change Chef John's recipes because they are always great. To 'make it my own' (as he instructed) I only added 4 oz. of Chive & Onion Cream Cheese Spread to the hot mashed potato pulp before spooning into the shells. Nothing else, just the recipe Chef John shows. This is a REALLY great take on 2x baked spuds. Highly recommend it and I'm a chef.

Chef John's Pumpkin Pancakes
Follow it exactly and the result is very good. Kids loved them, wife loved them, I loved them...what else can you say? No changes and they were just as Chef John described.
