My favorite things to cook
Shrimp! Anything with shrimp. God's gift to the world! Foods with lots of raw vegetables. Raw, fresh and crunchy is how the veggies perform! I love to smoke foods. Kingly Smoked Salmon is what you'd want as your last meal. Seriously. I also love slow cooker foods that are more than just roast beef or soup. Ever tried stacked beefy bean enchiladas in a slow cooker?
My favorite family cooking traditions
Spiced turkey at Thanksgiving, Pickled shrimp, fresh vegetable salsa (not the tomato store bought stuff, cooking a full breakfast every Sunday morning to give my kids something to remember when they get older). I use 100 year old 'hand-me-down' recipies updated to ease the calorie burden and more healthy.
My cooking triumphs
I catered a wedding for 400 people. I am not a caterer.
My cooking tragedies
Served my mother-in-law Banana & Peanut Butter Stuffed French Toast I had raved about for months and grabbed seafood seasoning instead of ground cinnamon to sprinkle on the finished product. Wrong! Oops! I'll never forget the look of revulsion.

Chef John's Salt Roasted Chicken
Perfect chicken! As easy as it can get and end result is just as promised, perfect. Not too crazy about the sauce because the chicken is that good and the sauce really isn't. Sorry. Doesn't need a sauce.

Best Italian Sausage Soup
Good recipe and makes a lot. 4 Stars because final product benefits from a fair amount of Parmesan Cheese (shredded not powdered) and a sprinkle of crushed red pepper flakes. Will make again.

Chef John's Chicken and Mushrooms
Remarkably simple with extraordinary taste all around! The mushrooms are perfect and the chicken truly does shine in all it's flavorful glory and tenderness. I served mine over Orzo pasta. Delicious!
