Luck o' the Irish Brownie

I put my brownies in the fridge overnight and when I tried to cut them into serving pieces in the a.m., the chocolate topping started cracking apart, and I had to press so hard to get through it that I squished the icing in the center. I don't think I'll be repeating this dessert any time soon.

Easy Sweet Potato Ravioli

Fabulous, easy! However, I really cheated .... I didn't have squash on hand, but I had leftover mashed sweet potato from making the delicious sweet potato pie, so I used that instead. OMG!! I added some dried sage, upped the cayenne just a smidge and proceeded as directed. Thought I'd better taste one, and then, two, and eventually about 10. Froze the rest for company. These are GOOD! Added bonus is the "roasted garlic clove" you can use in another dish.

Sweet Potato Pecan Pie

Just tried it today because my husband and I have never tasted a sweet potato pie of any sort and it sounded interesting. I'd have to give it 5 stars! Great flavor, lighter in texture than pumpkin pie, good crunch from the pecans, and best of all, each wedge of pie came out "whole", not a bit drippy. That makes for a pretty presentation with the whipped cream. I was out of evaporated milk, so used heavy cream instead. No problem!
