Hot Breakfast Couscous

This has become a portable favourite for me. I work early (5 AM) and by the time I'm ready to eat, just heating this up and smelling the cinnamon and nutmeg wafting through the microwave's vents makes me feel like I'm back in my mom's kitchen. FYI, I usually add vanilla to the milk and shake it before adding it to the couscous to heat. Enjoy!

Baked Pancake Squares

Super Yummy! The nice thing is that this is an adaptable reciepe, so you can make the pancake bites whatever flavour you'd like. This is perfect for a travel day . . . they made a great snack in the car during a long and sometimes weary road trip.

Basic Corn Muffins

The best part of any recipe is it's simplicity and this one is super simple . . . as a matter of fact, I had mixed the batter before the oven had finished pre-heating. For a low fat alternative, I used low fat margarine melted in place of the oil, and the muffins were soft and tasty. I'd make these every night if I could!

Veggie Mac-And-Cheese

This was easy to make and a treat to eat. I can't say enough about it, and neither can my boyfriend! To make it truly low-fat (I have a pacemaker), I used 1% cottage cheese instead of ricota, and part skim mozzarella instead of romano. Thank-you all recipes! Another hit.

Cream Cheese Christmas Cookies

Yummy! Very delicate cheesecakey kind of taste. Just one note - my oven is a bit hotter than most, so the bottoms are a bit black. Starting at 10 minutes, keep y our eye on them to make sure that the cookies don't burn!

Pumpkin Cheesecake I

I loved this reciepe for it's ease of use. Instead of using the ready made pie crusts (which is a huge time saver), I made a cookie crust. No matter - the pie tasted divine, wasn't overly rich and was silky smooth. As an alternative, I used low fatfat free cream cheese and you wouldn't even know the difference!

Soft Christmas Cookies

Super easy to make and even easier to eat. This is a recipe that will please everyone in my Christmas Cookie Excahnge. As an alternative, I used reduced fat butter that was unsalted and it all worked out really well!

Corn Meal Pancakes

The recipe was a blast to make, and it was so quick. I altered it slightly and added fat free evaporated milk instead of 2% and they were just as light and fluffy as any pancakes I've ever made. Thanks for the fantastic brunch!
