Best Brownies

I followed the instructions of another poster and used a spoon to mix all ingredients instead of beating. It didn't specify, but I used a glass 8in pan. Absolutely delicious!

Glazed Meatloaf I

Oh, man. This is the first meatloaf I've attempted. I was looking for a recipe that would forego the "cakeyness" of other meatloafs. So following the advice of several others, I used: 1 cup of oats in place of the bread. The oats allow the ingredients to adhere to actually make a loaf without gluten and thus without that spongy texture that I hate. I also lined the loaf pan with sliced potatoes (bottom and sides with very thin slices on top of the meat and covered with a layer of sharp cheddar) and used: 2 tablespoons of finely diced shallots instead of onions. I also added: a few dashes of Worcestershire. The sauce is just beautiful, especially with a bit of apple cider vinegar. Next time I'm going to put an extra layer of sliced potatoes on the bottom (the potatoes underneath the meat soaked up the excess moisture from the loaf, making a sort of mashed potato crust). It was a happy accident that I intend to expand upon. :)

Famous Butter Chicken

Delicious! I added Greek seasonings to the crackers and cooked each tender of chicken on a half strip of bacon! Restaurant quality!

Doggie Birthday Cake

It's my dog's birthday today, so I wanted to bake something delicious for him, and these definitely did the trick. I cut the recipe in half and made 4 decently-sized cupcakes in foil baking cups on a cookie sheet. I didn't have any carrots, so I added a bit of chicken broth for moisture and then fried up two strips of bacon. Most of the bacon went into the batter, and I saved four small pieces to put on top of the cupcakes. While the cupcakes were baking, I poured just a little bit of chicken broth into the bacon pan and scooped the resulting mixture into a bowl and added a little more peanut butter for a "frosting." He. went. crazy. I had more fun watching him devour the cupcake than he did eating it, I'm sure. Great recipe. :)

Chocolate Chip Banana Muffins

Seriously delicious. I've made these many times now. Everyone loves them, and they're so amazingly moist! Add a tsp of cinnamon for a little extra flavor!
