Zucchini Stuffed Chicken

This was a delicious recipe! I substituted mozzarella cheese for the swiss (it was what I had), and panko crumbs for the bread. Got rave reviews from the fella, and I think the kiddo even liked it! Will definitely make this again!

Southern Pimento Cheese

Freaking AWESOME!! I added another jalapeno and doubled all the spices... was definitely better later, after all the flavors mended together. Plan on making this again soon!

King Ranch Chicken Casserole

I've made this twice now and the second time was definitely better. First time I followed the recipe exactly as written and it came out a little too "sloppy" and we ended up adding tortilla chips as we ate it. The second time I added a few more tortillas, used hot Rotel, and also used leftover brisket instead of chicken. I got rave reviews and can't wait to eat the leftovers!! Wonderful recipe and it will definitely be used again:-)Maybe next time I will use tortilla chips instead of corn tortillas, as suggested by another reviewer.

Incredibly Delicious Italian Cream Cake

I made this recipe almost as it was written and it was AMAZING!! I used a full cup of butter instead of the 1/2 butter 1/2 shortening. It has even been requested that I make it again, only a week later. I did double the icing, as a few folks commented it was necessary, and ended up with enough leftover icing for another cake. Wonderful recipe, thank you!!

Texas Caviar I

I didn't have quite as much bell pepper(s) as the recipe called for, but I added corn to make up for it. Was wonderful! A lot of it got eaten at the party, and the leftovers made for GREAT hangover food;-)

Pan-Roasted Chicken with Lemon-Garlic Brussels Sprouts and Potatoes

I followed the recipe to a T and the lemon pith in the bottom of the pan ended up giving them a very bitter taste. And my potatoes didn't cook at that high of a temp, ended up dropping it down to 350 & covering it to finally get them done. I also had to make a 2nd batch of the lemon garlic sauce to get everything coated well. It smelled absolutely wonderful cooking though! I will try it again because it's a great combination of ingredients, but I will not put the lemon on the bottom as called for. Maybe I'll do like the other reviewers said & just cook everything in the pan together.

Bulgur Pilaf with Lamb

The family liked it... we didn't have Bulgur so I used 1 c. Barley with 2.5 cups water and 2.5t chicken bouillon. I also followed the advice of one of the previous posts & put some turmeric, coriander, and cumin seeds in it, and cooked about 1 T. minced garlic with the onions. Not a bad way to use leftovers!

Sweet Potato Cheesecake

This turned out wonderful... I got caught needing to bring a dessert to dinner. Ended up using a pre-made (gasp!!) graham cracker crust and the filling made enough for 2 cakes. I only cooked it @ 350 for about 30 minutes. Added 1 Tbsp Vanilla and 1 Tbsp Coconut extract. Also, I grated a whole lemon and a whole orange (little) for the zest- it wasn't quite a tablespoon, but close enough! And it was a perfect amount! After the cakes were done I sprinkled the top with brown sugar & put some marshmallows all over the top. It was just the touch needed. Not too sweet, but absolutely delicious. Thanks for the recipe!!

Chicken with Asparagus and Roasted Red Peppers

This was delicious!! Super easy & quick. A few of you complained that the broth evaporated before everything was done- I had no problems, so you might need to cut your chicken into smaller pieces (not do a solid breast) and/or turn the heat down. I added onions to mine & served it with some delicious Risotto. Plates were cleaned, so it will definitely be made again:-)

Tomato Bisque II

I fresh roasted tomatoes & onions and then put them in a blender to dice- seeds & skin. I also added a jar of fire roasted red peppers and subbed a cup of half & half for a cup of the milk. It turned out delicious!! Will definitely make again!

Healthier Delicious Ham and Potato Soup

This soup turned out wonderful!! I think I used this recipe more as a guide.. Used the ham bone from my New Years ham to make a stock- covered the bone in water in a stock pot and let it simmer for about 3 hours. Then used that as my base. Added celery, onion, carrot, and potatoes- cooked. Then added roux. I also added a little garlic, salt, chicken boullion, and cayenne pepper. My first time cooking potato soup & it will definitely not be the last!!

Pecan Pie V

My pie came out looking rather funny, but it tasted delicious! Loved not having to use corn syrup:-) Was kind of runny, but I attributed that to me not doing something exactly right... no matter what, I only got half a piece, so I did something right.

Prime Rib

This was my first attempt at Prime Rib & let me tell you, the whole family thought I was a pro... mom, dad, aunt, cousins, sisters, etc.. Great recipe and very easy! I didn't measure everything out, but followed the instructions as they were written. A meat thermometer is KEY to making your prime rib right.

One-Pot Hamburger Adobo Dinner

What a tasty way to incorporate loads of great veggies into dinner! I did double the sauce, I like things very saucy. Made some quinoa as a side, flavored with beef bouillon, apple cider vinegar, soy sauce, & Worcestershire sauce... the whole family devoured it and loved it. The only complaint I got was that it was too spicy- it was from my sister who is a baby anyway! Will definitely be making this meal again!!!

No-Noodle Zucchini Lasagna

This was a wonderful Lasagna! I couldn't believe the receipe didn't call for garlic, so I added about 3 cloves & it was not quite enough. I also didn't have parsley, so I used italian seasoning and it worked great. My family raved about it... will definitely be cooked again!
