Avocado Salsa

4 stars when prepared as is. I added extra salt, diced jalapeno peppers, and cayenne pepper. Really good recipe.

Divine Hard-Boiled Eggs

This was a total failure. I followed the recipe and when we tried to peel them, the shells stuck and the membranes stuck to the whites. I used our oldest eggs since we have our own hens and I've always been told that fresh eggs are impossible to peel. I decided to try another method because we needed some prettier eggs to pickle and these were absolutely UGLY... I boiled a pot of water and added the eggs one at a time. After about 15 minutes I rinsed with cool water and covered them with ice. I peeled them once they were cold and the shells almost fell off. I even used eggs that were only a week old(fresher than any egg at the supermarket).

Simple White Cake

This recipes barely gets 2 stars! I followed the recipe exactly and I ended up with flat, dry, crumbly cupcakes. Yes, I creamed the butter and sugar well. No, my baking powder was not expired. I bake all the time, so I know what I'm doing. I just think there are better recipes out there to try.

Vanilla - Chocolate Powdered Sugar Frosting

I had no trouble at all with this recipe being too thin. I always use real butter and I allow it to sit on the counter while I bake the cake or cupcakes. Adding the milk a little at a time prevents your frosting from becoming too thin. I frosted 24 cupcakes and still had a little left over. This is so much better for you than the store bought frosting. All those preservatives and trans fats---YUCK!

Cajun Style Red Bean and Rice Soup

Very good recipe. Andouille sausage can be sustituted with smoked sausage without much of an affect on taste. If you like it thicker you can take out a cup of the cooked beans and mash them with a fork. It thickens it up and makes it creamier.

Easy Fruit Dip

Everyone in my family absolutely loves this dip. I let the cream cheese sit out on the counter until it softens. Using a stand mixer really blends the ingredients well. I always add more cherry juice to make the color brighter and give it more of a cherry flavor.

Pretzel Turtles

I couldn't believe how delicious these came out and they weren't hard at all to make. The hardest part is unwrapping the Rolos. I found that 3 min. in the oven was more than enough time to melt the chololates. They do take a really long time to set up so plan to make a day ahead. Mine stayed fresh in a plastic container for over a week.

I've been making these for years and they are always a huge hit. DO NOT boil longer than 3 minutes or it will turn into a crumbly mess that won't roll together.

Boudreaux's Zydeco Stomp Gumbo

I've lived in south Louisiana all of my life and this is the best recipe for gumbo I have ever found. I didn't have chile peppers both times I've made it and it still turned out great. When and if it gets cold enough down here I'll definitly be making again.
