Crepes

I was always intimidated by crepes, but they are my husband's favorite breakfast food, so I decided to give them a try. These are wonderful and soooo easy. I added a touch of powdered sugar and a splash of vanilla extract. The kitchen smelled fabulous. Before the hour of refrigeration was up, my husband was stirring, but no matter, even after only about 30 minutes in the fridge they set just fine. I know this recipes says it makes 8 servings, but it actually fed the two of us perfectly.... is that bad to admit?

Slow Cooker Carolina BBQ

This was delicious! Exactly what I had in mind; tangy, tender barbecue. My very picky husband raved. Plus- it was a piece of cake to make. I cooked it on high for 5 hours and it was perfect. I will absolutely make this again.

Yummy Artichoke Dip

Honestly, you cannot go wrong with this recipe. I omit the green chile peppers (they seem a bit random and unnecessary) and I got a bit heavier on the artichokes. People die for this dip. Really.

Irresistible Pecan Pie

Awesome- but certainly not for the "I don't love sweets" types! My five stars are based on the following amendments taken from other reviewers: - I added a few hearty dashes of cinnamon and 1 tablespoon of vanilla - I added 1 tablespoon of flour to the filling - I substituted the dark Karo for 1 tablespoon of molasses (only because I had no dark Karo). The result was fabulous. I used a store-bought pie crust and I didn't bother to arrange the pecans in a dainty pattern. I will surely make this again!

Sweet Potato Casserole II

Fabulous! It was a bit different from the sweet potato casserole of my childhood; I wasn't accustomed to the OJ, but I found it to be the perfect addition. I added a layer of pecans and brown sugar under the marshmallows- YUM!

Tuna Noodle Casserole III

This is the tuna casserole of my childhood. I love this stuff! Even my husband who usually won't go near a casserole approves! I substitute the American Cheese for grated mozzarella and muenster. Yum!

Chocolate Cream Cheese Frosting

This was awesome. I used it to frost my mother-in-law's birthday cake and it was a huge hit. My husband had to restrain me from eating it straight from the bowl. It was pretty soft the night that I made it, but set well in the fridge overnight. I wish it was a bit darker, mine was a very light brown... I may use a bit more chocolate next time.

Pumpkin Oatmeal Chocolate Chip Cookies

I grew up eating (and loving) these cookies. The pumpkin is subtle enough that even my husband (not a pumpkin fan) likes them. I half the recipe, but still use an entire egg. I use regular sized chocolate chips and my oats are just "old fashioned rolled oats" rather than "quick" oats. Highly recommend this recipe.

Chicken Enchiladas I

I don't eat meat, but I made this for my boyfriend and he liked it quite a bit. The changes I made were as followed: I added 1/2 a packet of spicy taco seasoning along with the sour cream and tomato sauce. I omitted the spices and the water. I also used enchilada sauce rather than the taco sauce. It was a big hit!

Garlic and Basil Vinaigrette

This was fabulous. I had a ton of leftover basil, so I doubled this recipe and I added a handful of arugula as well. I dumped all of the ingredients in my food processor, rather than a blender. I have tossed this dressing with pasta and quinoa for quick salads. I'm sure I will continue to make this/versions of this for years to come!

Roasted Brussels Sprouts

This is a truly wonderful recipe. Why weren't they prepared this way when I was growing up?! Much better than the traditional boiled sprouts. I am a garlic lover, so I toss mine with minced garlic and sesame seeds before I bake them. Try them... you'll like them!

Amazing Sun-Dried Tomato Cream Sauce

This recipe lives up to its name; it really was amazing! I made a few modifications, as suggested by other readers. I started with sauted shallots and garlic, to which I added the cream and butter. I also added some red pepper flakes, omitted the nuts and added peas and shrimp to finish. I served the sauce over Trader Joe's artichoke tortellinis and it was a BIG hit.

White Bean Soup

I just prepared this soup and it was a real hit! I made the following adjustments: I added 2 chopped red potatoes as well as a can of chopped spinach, as suggested by previous reviewers. I also added a few shallots to the onion and garlic mixture. Additionally, I substituted veggie broth (I am a vegetarian). My husband and I found the flavor and consistency to be excellent. He asked me specifically to add this to my 'rotation.' Plus- it's great for those of us with the infamous "I will lose weight" New Year's resolution. Try it with a crusty multigrain bread- DELICIOUS!

Ropa Vieja

My mother has made a version of ropa vieja for years. I decided to give this recipe a try. Like some other reviewers, I used a crockpot also. I cut down a bit on the salsa. The flavor was wonderful, but it came out a bit 'soupier' than I would have liked. In the future I will reduce the water so it is a bit drier in the end. Otherwise, no complaints!!

Fruity Couscous Salad

This was delicious! However, it did require a bit of tweaking. I took the advice of previous reviewers and added OJ. Great tip! I also substituted golden raisins for the craisins, and I used malayta apricots instead of the traditional ones. I added a bit of cinnamon and a can of chick peas as well. LOVED it!

Ratatouille

I really enjoyed this super-easy dish! I had no zucchini- but no matter. As a few other reviewers noted, it does create quite a bit of liquid, but the flavor is wonderful! Next time I will add some spinach. Thanks Lynette!

Chocolate Crinkles II

I made these for a cookie exchange. They were pretty good. They had a subtle flavor and they weren't terribly sweet. The only adjustment I made was to add a teaspoon of instant espresso with the vanilla. I always do this in chocolate recipes as I find it enhances the chocolate flavor. They were well received.

Cha Cha's White Chicken Chili

This was excellent, though I am hesitant to call it "chili." It really had more of a soup consistency. I cut back on the jalapeno peppers and pureed half of the beans (which helped to thicken it up). I also topped it with a dollop of sour cream and some fresh cilantro. My husband and I loved this! I will make again, for sure.

Luscious Chicken Pot Pie

Huge hit at my house. I can't give it 5 full star though, as I do believe it requires some "spicing up." I add salt, pepper, fresh thyme, garlic and onion powders, sour cream and mozzarella cheese. I also use an egg wash. This pot pie seems to please just about everyone.
