Chicken Enchiladas I

I don't eat meat, but I made this for my boyfriend and he liked it quite a bit. The changes I made were as followed: I added 1/2 a packet of spicy taco seasoning along with the sour cream and tomato sauce. I omitted the spices and the water. I also used enchilada sauce rather than the taco sauce. It was a big hit!

I really enjoyed this super-easy dish! I had no zucchini- but no matter. As a few other reviewers noted, it does create quite a bit of liquid, but the flavor is wonderful! Next time I will add some spinach. Thanks Lynette!

White Bean Soup

I just prepared this soup and it was a real hit! I made the following adjustments: I added 2 chopped red potatoes as well as a can of chopped spinach, as suggested by previous reviewers. I also added a few shallots to the onion and garlic mixture. Additionally, I substituted veggie broth (I am a vegetarian). My husband and I found the flavor and consistency to be excellent. He asked me specifically to add this to my 'rotation.' Plus- it's great for those of us with the infamous "I will lose weight" New Year's resolution. Try it with a crusty multigrain bread- DELICIOUS!

Tomato Enchilada Bake

I recently made this dish for a party, and it was quite a hit! I made a few minor modifications. I used store bought enchilada sauce, as opposed to the sauce suggested here. I also added a package of taco seasoning to the chicken and sour cream mixture instead of the spices listed. Finally, instead of rolling individual enchiladas, I layered small corn tortillas, then the chicken mixture, then more corn tortillas and finished with cheese and enchilada sauce. I am a vegetarian, so I did not try the dish, but it received rave reviews and was gone before I knew it!

Ropa Vieja

My mother has made a version of ropa vieja for years. I decided to give this recipe a try. Like some other reviewers, I used a crockpot also. I cut down a bit on the salsa. The flavor was wonderful, but it came out a bit 'soupier' than I would have liked. In the future I will reduce the water so it is a bit drier in the end. Otherwise, no complaints!!

Roasted Brussels Sprouts

This is a truly wonderful recipe. Why weren't they prepared this way when I was growing up?! Much better than the traditional boiled sprouts. I am a garlic lover, so I toss mine with minced garlic and sesame seeds before I bake them. Try them... you'll like them!
