Stuffed Shells I

Reviewed: May 1, 2012
wonderful recipe for stuffed shells! great left overs also! i added ricotta cheese to the cottage cheese to get a blend of both cheeses. i cooked bacon and chopped it up and added it to the cheese mixture. i also added chopped fresh spinach to the cheese and it worked out very well! also cooked up a pound of italian sausage with the sauce. i used more garlic and added mozzarella cheese on top of the parm and baked covered 25 min and uncovered 15 min. after all the changes/additions, it turned out AMAZING! i couldnt stop eating it. it is my new favorite pasta dish!!!

Actually Delicious Turkey Burgers

Reviewed: Nov. 30, 2012
THE BEST BURGER! I absolutely loved this burger!! It was so moist, juicy, and flavorful. I too made a few changes: I only had 1 pound of ground turkey, so i used 2 heaping Tbls of seasoned bread crumbs, 2 tbls spoon of minced onion and green pepper, (i saute it first with cooking spray until soft and let it cool)used 1 egg white, a tbls of dried parsley cause thats all i had, 2 tbls chopped fresh cilantro (try this it really added a freshness to the meat!) 1 clove fresh garlic, 1 teas garlic powder, a dash of seasoning salt instead of salt and pepper. the other thing i added that no one else i saw added was 2 tablespoons of zesty italian salad dressing! SO DELICIOUS AND JUICY!! also, when you form the patties, press a little indent with your thumb in the middle of the patty, it helps it not puff up so much. i cooked mine for two min on each side in a med heat skillet, then finished it in a 350 degree oven for 5 min. (added cheese to melt the last 3 min) came out juicy and perfectly cooked! MUST TRY

Stuffed Green Peppers I

Reviewed: Dec. 7, 2012
I used this recipe and the reviews i read as a base and added/made changes to my liking. after the changes, the stuffed peppers tasted AMAZING! I cut the recipe in half, here are my changes - I used brown rice (which i precooked separately in chicken broth for more flavor) ground turkey instead of beef, and half a can diced tomatoes with Italian seasoning. i omitted the W sauce cause i didnt have any. I cooked the beef with the onions and garlic, then i seasoned the mixture with a dash of garlic powder, dried basil, seasoning salt, pepper. I then added the tomatoes and also a tablespoon of ketchup (from another review). i opened the tomato soup and mixed it with some milk to make a more creamy sauce and also added some seasoning to that (dried parsley, garlic powder, dried minced onions)and put a few heaping spoonfuls of the "sauce" into the beef. then i added the cooked rice and added a small bunch of fresh chopped cilantro (this REALLY added to the dish!!!) I then added italian cheese instead of cheddar, layered half a slice of pepper jack cheese on the bottom of the green peppers and then added the mixture. topped off with more sauce and cheese and a sprinkle of bread crumbs. THIS DISH BLEW OUR MIND! we LOVED IT! and it was so filling and delicious.. will be making again. i know i made lots of changes, but thank you so much for the base recipe!

Baked Pork Chops I

Reviewed: Mar. 11, 2013
Made this recipe using 2 thick 1.5 inch bone in chops. I skipped the bread crumbs coating (hubby hates bread crumb anything) so I only did the egg wash and flour dip. I pan fried for 2 min on each side (any more and it would have been burnt) and baked for 1 hour as the recipe states. I sauted some onions in the drippings and then made the gravy/sauce and used apple juice instead of white wine because I didn't have any. I poured the sauce on top of the chops and baked another half hour. These chops turned out EXTREMELY moist, tender and delicious!!! If you have thick chops, cook for the full amount of time!! It does not turn out dry at all!!! The only thing I'd recommend is to drain the grease before adding the sauce to the chops. I will be making this many many more times!!!

Awesome Slow Cooker Pot Roast

Reviewed: Mar. 11, 2013
I use a 3.5 pound roast with half a packet of beefy onion soup, 1 can cream of broccoli , half a soup can of chicken broth (left over from dinner the night before) , 3 crushed garlic cloves, and two heaping tablespoons of flour. Cooked on low for 12 hours and the roast was delicious! The gravy was perfect and did not need to be thickened. My in laws were visiting/on vacation (we live across the country from them) and loved the recipe stating its the best pot roast they have ever had! My MIL wouldn't leave without the recipe! I do not recommend putting any veggies in to cook with the roast, i find it dilutes the gravy flavor and the roast doesn't get as tender.

Slow-Cooker Barbecue Ribs

Reviewed: Aug. 26, 2013
These ribs are amazing with a few changes!!! I rated it 4 stars for the base recipe.but with the changes it's 10 stars!!! I used 2 cups BBQ sauce, 3/4 cups ketchup, and 1/4 cup siracha sauce instead of the ketchup and chili. Then I added 1/4 cup packed brown sugar, about 2-3 tablespoons of molasses, used a mix of white and red wine vinegar, 1 teas oregano, 2 teas Worcestershire sauce, 10 dashes chalula hot sauce, AND added 1 teas chile powder,2 teas garlic powder, 1 teas onion powder, , dash ground red pepper, 2 tablespoons honey. It made a delicious sweet and spicy BBQ sauce!!! I let it cook on low for 6 hours (could have gone a little less even, it was falling off the bone, but was still able to be taken out of the crockpot) and then switched it to warm for another hour until my hubby got home. When we were ready to eat, I preheated the oven to 350 degrees , put the ribs on a foil lined baking sheet, skimmed the fat off the top of the BBQ sauce , slathered on a generous portion on the ribs and baked for 20 minutes. The sauce stuck to the ribs and tasted soooooo delicious with a good amount of heat and sweetness. They were the best ribs I've ever had that weren't smoked. And definitely restaurant quality!! With those changes and additions the ribs were out of this world tender, falling off the bone and amazing!!!!!!!!!!!!

Blueberry Pound Cake

Reviewed: Jul. 5, 2014
THE BEST pound cake recipe I have ever eaten or tried!!!! I used fresh picked blueberries and also added a half a cup of low fat yoghurt to make sure it was moist. This cake is soo rich, buttery, and had the perfect amount of blueberries! It was very tender, came out of my pan well, and stayed extremely moist even after leaving it overnight unwrapped cause I forgot! I just baked another one but with raspberries in it for a friend. I got to try a nibble and the raspberry one is also delicious!!!!! It's more tart and tangy but very good. This will forever be my go to recipe. If you're looking for a great pound cake try this one! Also, a helpful note: I didn't have a bundt or tube pan so I reduced the serving size to 10 and baked it in a loaf pan for about an hour. It came out beyond perfect.

Blueberry Buckle

Reviewed: Jul. 5, 2014
This blueberry buckle turned out wonderful! I made the recipe exactly except used half brown sugar and half white sugar for the topping. The cake itself was very moist, bursting with blueberries, soft but fluffy. The crumbs were tender and the cake cut very well into squares and held together well. I used fresh picked blueberries and it was just perfect. Will be baking this again!!

World's Best Lasagna

Reviewed: Jul. 6, 2014
This review is only for the sauce: I omitted the meat, added sautéed mushrooms and more garlic. I also reduced the salt to 1.5 teaspoon. I put all the ingredients into my slow cooker, then let it sit inside the fridge for the next morning to just pop into the slow cooker. I placed it into the slow cooker to simmer all day on low. Just tried the sauce and it's amazing! Will be serving it with my homemade meatballs and spaghetti. I can't wait to try it with the beef and Italian sausage!

Simple Turkey Chili

Reviewed: Sep. 23, 2014
I used this recipe as a base recipe for my own Turkey Chili. Thank you so much for the simple recipe that i could easily doctor up! The rating is for how easy the recipe was and how easily it could be modified. Here are the things i added: 1/4 pnd more ground turkey i had, 1 can drained and rinsed white kidney beans, (i mashed half of each can), 1 can seasoned beans for chili (not mashed at all), 1 can Hunts Dinner Starters for Chili, 1 green bell pepper chopped fine, 2 cups low sodium chicken broth instead of water. i did add the smallest splash of soy sauce, less than a teaspoon. (adds so much depth and complexity) tasted, then adjusted seasoning to taste (more chili powder, 1/4th teaspoon more salt, dash more red pepper, 2 teaspoon onion powder.) Simmered for a 30-40 min uncovered to thicken, and then 30-45 min more covered to let the flavors blend. TURNED OUT AMAZING! my fitness pal converting for 8 portions is 328 calories each. thanks again!!
