Like so many others, I was left with a lot of leftover Christmas ham. Thiw recipe is easy and amazing as it is, but since I love to "customize" my recipes (where it is called for), I took a few liberties with this recipe. I started a stock with the ham bone, water, onion and celery and some leftover chicken stock. I then continued with the recipe, but removed the celery stalk and omitted the chopped celery. I added chopped carrots since my husband loves them. I also seasoned with some tarragon, thyme, chili flakes. To thicken the soup, I also added a package of butter & herb flavored instant mashed potatoes, as the soup was a little thin for what we normally like. The recipe will definitely stay in the line up (as is, or with future tweaks depending on our mood, like taco seasoning or a spicy base). Yum!
