Pumpkin Dump Cake

It was real good. Not as easy to throw together as other dump cakes I have made in the past. But worth the little extra effort. Kinda tastes like a pumpkin pie with a crunch crust and the pecans add a pecan pie touch to it. Served it with whipped topping. Will make it again. I am going to try to freeze some of it as it is just the two of us. Mine looked just like the photo here.

Honey Bun Cake

Tasted really good. It was very moist. I used homeade applesauce. Will make this again sometime. I gave some away to a neighbor that later came back and asked for the recipe.

Taco-Stuffed Pepper Cups

I was looking for a healthier mexican alternative and found this. I liked it but hubby is not thrilled with peppers instead of tortillas or taco shells. I added corn instead of beans because I had some homeade refried beans that I put a layer on top along with some guacamole and light sour cream. It won't replace traditional tacos for us but I would make it again on occasion.

Fiesta Pinwheels

I made these exactly as the recipe calls for. They are great. It made a lot for just the two of us. Would be great for a party appetizer. They also freeze well. Just thaw in the refrigerator when you want them. We will make them again.

Baked Pesto Chicken

We love the flavor of basil pesto. This was a hit. I used our own pesto that I had made and frozen in ice cube trays. And coated both sides of the chicken with it. I did not have any tomatoes so did without. Next time will dice up some tomatoes and put them on to warm slightly in the oven. The chicken came out moist and flavorful. It was delicious. If you don't like a lot of pesto then just coat one side of the chicken with pesto.

Homemade Black Bean Veggie Burgers

I will still be buying veggie burgers until I find a recipe that compares. I made the recipe & froze the patties. No trouble with them falling apart. However, the texture was like eating a mound of mashed beans, the flavor was good. Not sure I would make it again. Going to try some others before I try to attempt modifying this one. 2 stars for flavor.

Rosemary Ranch Chicken Kabobs

The chicken was very moist and juicy for grilled chicken. My normal grilled chicken usually is dry. This is great. The flavor was good without being to over powering. This has been added to my favorite recipes and we will make it again.

Tarragon-Turkey Soup

This was a great tasting soup. I used shredded and cubed cooked turkey instead of ground turkey. It was also good as left overs. It makes alot of soup.

King Ranch Chicken Casserole III

Chicken Chipulos

This recipe is very close to that of "King Ranch Chicken" In that recipe it uses chicken broth. I think that is what is missing here, there needs to be more liquid. It is a mexican casserole with potential. It can be changed to your tastes or add the ingredients you like ie.. corn, black beans, or bell peppers.

Pesto Sauce

Great Pesto. The walnuts give the health benefit of omega oils. Pine nuts are not really nuts and don't have the omega oil benefit. I grow fresh basil and make this recipe then put it in ice cube trays and freeze. I then have a supply of pesto and basil all winter long.

Ginger Glazed Mahi Mahi

The flavor was great but our fish had a fishy taste. Not the fault of the recipe. Our only available fish was frozen Mahi Mahi. We will try this but with pork chops instead of fish. The glaze is very good and tasty. Sweet and soy tangy.

Artichoke & Spinach Dip Restaurant Style

I made this exactly as it is printed with no alterations. I gave it 3 stars because while it was good, it seemed to be missing something for flavor it just did not have zing! It was very creamy, and cheesy. But seemed a bit bland. I will be searching online for other recipes to see what spices are used and maybe try it again with some spices for more flavor. Most dips I have had when dining out seem to have something that is a distinctive flavor making it just seem awesome. Do take into consideration that my DH and me seem to like things a little spicy.

Black Bean and Salsa Soup

This recipe is so easy, fast and tastes great. The first time I made it my husband saw it in the blender and thought yuk. It does not look pretty in the blender but once heated it looks better and tastes great. You can alter the hot spicy taste by using your personal choice mild, medium or hot Salsa. It also tastes just as good reheated. It is a family regular.

CRISCO® Chicken Enchiladas

Great flavor, probably too spicey hot for children, but one could adjust that by reducing the chili powder when making the enchillada sauce. I also used diced onion instead of green onion and since I had no sour cream I made them without it. We will make this many times more.

Salsa Chicken

Delicious and easy to prepare. I used Chicken taco seasoning mix instead because it was what I had. We like spicey so I used the entire package instead of only 4 teaspoons and just coated both sides of the chicken with it. Will definately make again!
