Blueberry Streusel Muffins
Bland flavor even with extra blueberries. I tried to stay with the recipe, but the batter was so thick as others have stated that I ended up adding an extra few tbsp of yogurt until the consistency was right. Also after adding the 1 cup of blueberries it seemed like it was lacking blueberries, so I added an extra 1/2 cup. Maybe my fresh blueberries were just big and fat so 1 cup wasn't enough. They cooked up nicely at 375, but were done in about 17 minutes instead of the 20 recommended. I think I might try with the brown sugar as others have suggested or just try another recipe altogether. Added notes after eating a few more... The blandness comes from the muffins not being sweet enough. Funny because when I was putting the 1/4 c of sugar I did a double check thinking was was such a minimal amount for muffins. Will try again with more sugar.

Pecan Pineapple Coffee Cake
Quite tasty and light enough for a summer treat. I followed the recipe and added a handful of coconut, which was maybe about 1/3-1/2 cup. I didn't have pecans, so I mixed coconut with the brown sugar for the topping. Came our nicely in 30 min at 375. The center was moist, and cooked through, almost the consistency of moist banana bread. I made a cream cheese pineapple glaze,(1/4c butter-3oz cream cheese-1 and 1/2 c powered sugar, and about 2 tbsp pineapple juice(enough to drizzle). I drizzled it over the top once it was cooled. I will definitely make this again and try using pineapple yogurt for an extra kick and also try less pineapple to see the difference it makes with the moistness.

Real Homemade Bagels
It's quite tasty. I did change the bread to water to ratio to what i know would work from making tons of bread. 1 and 1/2 water and 4 cups of high gluten flour. I also mixed the dough in my bread machine, it's just easier that way. The recipe is exact to my pizza dough 1 and 1/2 water, 2 tbsp oil, 4c bread or high gluten flour, 1tsp salt(sprinkle about that much) and 3 tbsp sugar(a handful), and 1 pkt rapid rise yeast. I decided to go with Onion bagels, so I added onion powder to the dough (about a few tbsp, just sprinked, so dont know the exact amount) . Once the dough was finished I took the advice of adding honey to the water(not sure if it made any difference, just used up a bunch of my honey). It is just like making pretzels or pretzel dogs I dropped them in the water and flipped after about 30 or so seconds then placed them onto a parchment lined baking sheet. I brushed the top of each with egg white then sprinkled with onion flakes. I then baked in a 400 oven for about 20 minutes checking after 15 then every few minutes until they looked done. I turned the oven off, opened the door and covered with foil. I have learned from making, pizza and pretzles that this helps the chew in the crust. Now I just have to keep from eating them all before the rest of the family comes home.
