Cinnamon Rolls III

As I didn't have milk in the house I decided to do something I don't often do.....try to make a recipe with a substitution BEFORE I made it according to the original directions. So...I substituted vanilla yogurt for the milk and the pudding and hoped for the best. dough raised perfectly! I was shocked. so I soldiered on thinking...okay something is going to go wrong with them in baking. Nope! Nothing went wrong in the baking. The texture of them was very soft and chewy which I imagine may have something to do with the yogurt, although not sure because there are many reviews that complain about the texture who did not substitute as I did. Either way...I prefer it this way. I don't like dry cinnamon rolls and these definitely did not turn out dry at all...and the dough itself was not overly sweet as other reviewers have mentioned. The only reason I am not giving it a total five stars is I think the cinnamon mixture for the inside could use some tweaking...maybe less sugar as the current ratio makes for a very sweet filling, especially since it calls for brown sugar..maybe take that down to 1/2 cup and increase the cinnamon by one more teaspoon. I did not add the icing to them as the filling made them sweet to begin with..and the roll itself was such a lovely softness....I did not think it was needed.

Blueberry Coffee Cake II

Made this into muffins but as I did not have milk I substituted vanilla yogurt. Wow...awesome substitution which made it a very moist delicious muffin. The only reason I did not give it a full five stars was the crumb topping.....something with the ratio of butter to flour to sugar just didn't turn into crumb for me...it ended up being a melted sugary goo which made all my muffin tops ooze together. It did eventually harden after I left the muffins in the oven for about ten minutes longer than required. I think the next batch I will use less butter and more flour and sugar to get it to "crumb" like it's supposed to.

Amish White Bread

I tried this recipe for the first time yesterday. We just love it....my husband says it reminds him of the rolls we used to get at one of our favorite restaurants that went out of business years ago. I am so very happy to find this recipe and am now in the process of making a second batch of loaves today...hopefully it will freeze well because this is going to be my go to recipe for every loaf/roll I make in the near future.
