Kung Pao Shrimp.....a new weeknight tradition! :-)

On Sunday, instead of relaxing, since it was MY day and all (Mother's Day) i was at the grocery store shopping for the weeks meals. I kept reminding myself....fish...seafood....SHRIMP!!! Now as much as i reminded myself in the store, i got the shrimp home and forgot all about it...until last night. But how should i cook it was the 24 million dollar quesstion. I try not to fry much anymore, not to mention i threw out my deep fryer. So frying was out the question.....and i didn't have a taste for a scampi, so in the Crockett family cookbook i go. Ah ha.....we had tried a few shrimp recipes recently so i knew any i find in our cookbook would be awesome. Kung Pao. Now of course since I didn't have all the ingredients (peanuts and bell peppers) i just improvised....i added scallions and made a side of broccolli. We also don't care for spicey food so i scalled the hot sauce down a bit. It came out finger lickin' good! We had a little over 1 pound of shrimp and there was absolutely nothing left. The juice/sauce the shrimp cooked in with all the yummy scallions, fresh ginger, and garlic was gone too. To keep along the lines of the Chinese theme a nice fluffy pot of Jasmine rice to accompany the dish was the finishing touch it needed to pull it all together. It was quick and easy and definitely one to keep at the top of the cookbook.

Our Crockett family cookbook is something my kids and I started a few months ago. Every dish we find on the internet and cook personally gets to go in the cookbook. If we didn't make it ourselves, it doesn't go in, regardless of how good the receipe sounds or how good the picture looks. I'm hoping it's something they continue with their kids. The problem is deciding who gets to hold onto it.....they both love to cook!
