Bodacious Broccoli Salad

I would have enjoyed this more with less of the red onion. I didn't even use a half of one as the recipe calls for, & it was still too much for my taste. I will make this again, but with much less red onion.

Slow Cooker Chicken and Dumplings

I did alter this recipe a little. I kept the 2 cans of condensed cream of chicken soup, & the onion, but changed to the reduced fat Grande refrigerated biscuits, chicken broth instead of water, and only used 3 chicken breasts because that's what came in the package of chicken I bought. I also added sage seasoning, but poultry seasoning would be fine too, & salt & pepper. I only used one single biscuit in my dish, not even the entire container of biscuits, and that was plenty of bread/dumplings IMO. I baked the other biscuits and we cut one in half and put the half on the bottom of our dish and put the chicken & dumplings over top. I can't imagine using two cans of biscuits in this dish, even with 4 chicken breasts. At the same time I added the dough, I added some frozen mixed veggies as well. The "gravy" part of this dish was excellent. My husband loved it and it was extremely easy to make.

Sugarless Pumpkin Pie II

I baked a real sugar pumpkin & pureed one cup of it for this filling. I didn't have any pumpkin pie spice, so I added some cinnamon, ground cloves, ginger & nutmeg. I used one cup of 2% evaporated milk & added a 1/2 cup of regular splenda, with the egg. It was DELICIOUS & I couldn't tell it was sugar free. Great recipe & a keeper for my recipe box.

Black Bean Brownies

Very fudgy & you cannot taste the beans. I substituted agave for the sugar, applesauce for the vegetable oil & egg beaters for the eggs. Delicious!

Zesty Carrots

Very tasty & different carrot side dish. I took other reviewers suggestions & used about 3/4 cup of light mayo w/ the 2 Tbsp of creamy horseradish. You can definitely taste the horseradish, so I was glad I added extra mayo. Will make again.
