Meatloaf, not the singer.

In an attempt to become more "homey" I decided to try my hand at meatloaf tonight. By the dashboard light of course. I went with the Bacon Swiss Meatloaf. It was pretty easy to make. I swapped the cornflakes for Italian Bread crumbs and I used applewood smoked bacon. It is in the oven now... and does it smell good!!! I just hope it tastes as good.

I am pretty proud of myself. I had an easy out tonight. There was a school fundraiser at a local fast food place.. and I could have easily found a reason to eat there in stead of cooking. But I didn't. I put on my big girl panties (which are pretty big right now, another reason I didn't go) and got my Chef on after taking Little Cupcake to Gymnastics tonight. 

Now let's see how this tastes!! Better be good darn-it, I don't want to have to go out...

I have a fantastic recipe for meatloaf that my mother actually found in a cookbook. It is amazing!
