I love to have unexpected company, don't get me wrong, but sometimes, if I haven't shopped for groceries, I'm stuck preparing lunch with what I have on hand.
Surely I'm not the only one who has been in this situation-come on, now. So, one day I had to make a fast lunch for friends headed to the airport. Time was limited, and so were my ingredients. That's when I came up with this easy "whatever you have"
salad. It has sausage in it, so all I had to do was serve it with some crusty bread (actually it was kind of old, hence the term "crusty"). A little iced tea, and their tummies were full in no time!
I jotted down the recipe after the fact, but feel free to use anything you may have one hand (especially when you are at the bottom of your vegetable drawer). Mushrooms, celery, green onion, anything can be added-it just makes it that much more colorful.
Italian Pasta Sausage Salad (although chicken, ham, turkey can be substituted, or no meat at all for a nice side dish or vegetarian dish.
