Need a Great Dessert for a Crowd?

When I have a crowd to feed dessert to, this is my favorite dessert to make.  It tastes like my favorite dessert of all times-chocolate eclairs.  

Now, don't get me wrong, I love to make choux pastry for delicious Eclairs au Chocolat, but it would take so much time to make that many for a group of people, so I make this instead-same taste.

Layers of graham crackers filled with rich vanilla cream and then topped with a creamy chocolate topping-YUM-EE!

Start with a 9x13" pan (I use a little larger one, and it's glass).

In a large bowl, beat 2 small boxes of french vanilla instant pudding with 3 cups whole milk (has to be whole-don't use 2%) until it thickens - I use a whisk.

Then add 8 ounces of thawed whipped topping (I use prepared, or you can whip your own from heavy whipping cream if you're in the mood).

Put a layer of graham crackers on the bottom of the pan, then add half of this wonderful rich creamy goodness and spread flat.  Add another layer of graham crackers and do the same, using all of the vanilla cream.  Now, one more layer of graham crackers-covering the top.

Take 1 plastic container of the pre-made chocolate frosting (regular, not whipped), and microwave it for a few seconds-about 30-40, stirring midway.  I keep it in the plastic can-so easy!

Now it's ready to spread-put it on top of the graham cracker layer and spread evenly-use all of it-it's the perfect size!  

Cover with plastic wrap and refrigerate a few hours or overnight.  When you're ready to serve it, cut into small squares, and make a pot of coffee or pour some milk.  

Shortcut-Yes.  Wonderful-Of Course!

This recipe has been and still remains,on AR for a long time, submitted by KBehrens2, under chocolate eclair dessert. I, along with many others, posted a review for it(October, 2009) substituting a glaze change recommended by another reviewer. It is a delicious dessert evidently enjoyed by many.
