About this Cook is my food blog where I post my simple recipes in a complicated world. I work for a commercial insurance agency, so cooking is the creative outlet that I need. I love to create my own recipes and enter an occasional cooking contest. My two grown sons grew up cooking in our kitchen, and now I enjoy cooking with my 5 year old grandson.
My favorite things to cook
Baking is my favorite thing to spend time doing. The science of baking has always fascinated me. From the time I was 12 I couldn't understand how popovers rose and kept their hollow middles and just had to see for myself by making them at 2 a.m. on a school night. I got grounded from the kitchen after that stunt.
My favorite family cooking traditions
Any holiday-my personal favorite? Halloween It wasn't until I had 2 kids of my own that I discovered how fun Halloween cooking can be!

I've had plenty-from burning toast to ruining an expensive piece of steak, if you cook enough, tragedies are bound to happen. Just like in life, live and learn.

Key Lime Pie VII
READ THESE TIPS before making since squeezing the limes is the most time-consuming part! #1 Microwave 8-10 key limes 30-40 seconds before squeezing. They'll be warm to the touch, and when you cut them open they'll burst with juice, making it much easier to hand squeeze into a measuring cup. #2 Microwave 8-10 at a time but cut 5 open while warm and squeeze while warm. Then cut another 5 open and squeeze while warm. As they cool after cut, it gets harder to squeeze them. While they're warm, the juice just comes pouring out. #3 Don't worry about the seeds until after ALL juice is measured-then pour through a wire mesh strainer or tea strainer. Goes faster this way. These are my lime squeezing tips because it's the most annoying part. The rest is easy-so few ingredients and so wonderful. Tastes like restaurant quality pie. You'd think you're visiting The Florida Keys! Make your own whipped topping and make your own pie crust please. It makes it mo bettah. I also have additional photos on my blog

White Fiber Mini Shells with Cherry Tomatoes, Basil and Parmigiano-Reggiano Cheese

Baked Ziti with Cheese
I loved the combination of bechamel and red sauce in this recipe. The breadcrumbs on the top was a nice touch, and it was cheesy, which is GOOD!
