Awesome and Easy Creamy Corn Casserole
I visit a local BBQ joint and one of their sides is corn casserole. I love it so much that I had to find the recipe and make it myself. I found this recipe via Pinterest. I liked it because it had no cheese in it like a lot of other recipes did. I made a double batch for a family picnic last week. I mistakenly omitted the eggs and halved the butter. Oops! I baked it for an hour because the other reviews said it took longer. I let it cool after baking and refrigerated until serving. i just heated it for about five minutes in the microwave before serving to remove the chill. It was basically "room temperature". It turned out delicious! Everyone raved about it. It was the only dish on the buffet that was empty! This dish isn't overly powerful sweet or corn-tasting. It's a consistency between corn bread and pudding. I didn't salt it because the canned veggies have enough sodium. I'm going to a friends BBQ picnic next month and will definitely be making this to take along! It will also appear on my Thanksgiving table this year too!

Chef John's Spaghetti alla Carbonara
Carbonara is my all time favorite pasta dish! I've always been afraid to try it because I thought the recipe was complicated. I got this recipe via email "recipe of the day" and thought I'd try it. I had to use pancetta because I couldn't find guanciale. I also used linguine noodles because I prefer them. Other than that, I followed the recipe as written. It was super easy to make and incredibly delicious! I seriously almost ate all of it myself. The peppery taste is incredible. Don't skimp on that and use fresh ground if possible! I thought the whole cup of water would be too much, but it's not. It made a delicious creamy sauce. I'm not sure how this will reheat. I have a feeling the sauce will separate. I'm going to try though because throwing the left overs out would be a sin. Seriously, this recipe is awesome! I loved this dish and will definitely make it again now that I know how! If you love carbonara, definitely try this. If you don't love carbonara, you will after you make this!!!

Soft Oatmeal Cookies
These truly are the BEST.COOKIES.EVER!!! I omit the cinnamon and add dark chocolate chips instead. Sometimes I'll add a cup of walnuts or pecans... depends who I'm making them for. I don't flatten the cookies, as recommended in the directions. These cookies turn out chewy and moist and this recipe makes a LOT of cookies. I use a pretty big cookie scooper and I still get about 4 dozen cookies! I make sure I rotate cookie trays, top to bottom and front to back, halfway through baking. I have baking these down to a science! Oh, and I don't grease the cookie sheets... there's enough butter in the dough, so they don't stick. If you love chewy, moist oatmeal cookies, these are for you!!!
