Comforting Cube Steaks
This was a good choice for this cool, rainy evening. However, I did make some adjustments based on my cupboard contents. The lemon-lime soda sounded very appetizing, so I substituted cola, which I've used in other recipes. Added a splash of Worchestershire sauce and used C.O. chicken soup with a can of sliced mushrooms. Nummers! Great over mashed potatoes and a side of peas with some crusty French bread and butter.

Grandma's Homemade Banana Bread
Definitely the best b-bread recipe I've tried. I used leftover lemon yogurt instead of the sour milk and added extra vanilla, a splash of lemon juice, and 1 c of finely ground walnuts. We devoured it in less than 36 hours! Really good with about 1/2-inch thick layer of sweet-cream butter spread on it!!

Eggplant Parmigiana Caponata
Absolutely wonderful, although I did do a few alterations as I did not have a few ingredients. I used green olives ground up in blender instead of capers, accidently cooked the peppers with the onion, and used green onion instead. It is a bit sweet, and I might back off a bit on the sugar next time, but there WILL be a next time!
