Slow Cooker Barbeque

Irresistible! My roast was slightly smaller, and I had fresh garlic and onion on hand, so I used those. So ridiculously easy, so yummy. It's going to be hard to eat just a reasonable portion rather than 2 or 3!!

Stephen's Chocolate Chip Cookies

I made a half batch, and it's a good thing, because I can barely keep from eating all of them. 3 "changes": 1, I used extra vanilla. 2, I didn't have milk chocolate chips, so I used Ghiradelli dark chocolate chips. 3, I also had only almonds, so no walnuts or pecans. STILL DELICIOUS. Only comment: be very careful to not overbake. Other than that, foolproof!

French Toast I

I read the reviews, so seeing that this was a very basic recipe, I ramped it up a bit, using half & half instead of milk, adding vanilla, and putting pumpkin pie spice directly onto the bread as it cooked to ensure that the spices didn't end up suspended in the egg mixture. The flavor was OK, but still relatively bland. It wasn't awful, but I will try a different recipe next time--one with a bit more personality in the ingredients.

Slow Cooker Teriyaki Pork Tenderloin

I didn't have 4 hours time, so I cut my 2-lb tenderloin into bite-sized pieces and cooked on high for 90 minutes. Doubled all sauce ingredients, though I substituted red pepper flakes instead of chile peppers (per another reviewer's suggestion). Delicious!! Served over sticky white rice. Will definitely make again.

Light Oat Bread

This is a good bread--good density, soft but holds together, easy to slice. I didn't find it to have a strong oat flavor, though that makes it more versatile for sandwiches. I like to try different recipes, but I will probably make this one again. I added more brown sugar (3T instead of 2) and I always substitute whole wheat for some of the flour (1C WW to 2C AP). I also add wheat gluten (1T per cup of flour) for better texture and a little extra protein.

Onion-Apricot Pork Chops

This is a keeper. I didn't have marmalade so I substituted 6 oz. of canned mandarin oranges and used their juice for the cornstarch. Absolutely divine--moist, sweet, and even the onions are delicious (not usually a fan). Thanks for sharing!!
