Award Winning Soft Chocolate Chip Cookies

This cookies were amazing the first time I made them! Everybody who tried them loved them! The problem is I made a mistake in the recipe. I accidentally used baking powder instead of baking soda. I also added a tablespoon of water. They were fabulous. This afternoon I made the cookies again and followed the recipe exactly, although I used chocolate pudding instead of vanilla. They turned out awful. They have a chalky feel to them. I love this recipe, although I will use my own variation next time.

Banana Bread I

This Banana Bread is fabulous! I have made it twice. The firt time I made it exactly as the recipe although I added a teaspoon of cinnamon. The second time I substituted 1cup of the flour with 5/6 cup whole wheat flour and 1/6 cup of ground flax seed. I also used 4 bananas. This batched turned out amazing! The flax seed adds a nutty flavour and tons of nutrients. I will make this again. Thanks for the wonderful recipe!

Carrot Soup

This soup is wonderful. I left out the butter, as suggested by another member and added a little olive oil. I would suggest adding more garlic, I love garlic and feel the recipe needs more. Otherwise this is fantastic! I will make it again! Okay, I have made this soup about 5 times. This last time was the best! I used baby carrots and omitted all butter and oil. I doubled the garlic and used chicken broth powder. It was AMAZING! also, try sprinkling chives ontop, yum!!!

Garlic Lime Chicken

I used this recipe to make a stir-fry. It was fabulous! I used onion, celery, carrots, yellow, red, orange peppers, snow peas, broccoli, and green zucchini. I first cooked the chicken, removed it from the pan, and placed the cooked chicken in the sauce to marinate. I then cooked the veggies, re-added the cooked chicken in sauce, simmered for about 5 minutes. Next, I added cooked pasta and let it all simmer an additional 5 minutes. I served it sprinkled with parmesan and pepper to taste! Fabulous! I guess I could call it “Lime Garlic Chicken Parmesan Stir-fry”! Thanks for the amazing sauce!

Can't Tell They're Low-fat Brownies

These are really yummy! As suggested, I used 1/4 whole wheat flour and 1/4 white flour. I started with 3/4 of a cup of sugar, but the batter wasn't sweet enough for brownies, at least in my opinion, so I added another 1/4 cup of sugar to equal 1 cup. I also used apple sauce, 1 tsp of vanilla and 1/2 tsp of salt. I baked them in a glass pan for 33 mins. YUM!

Apple Crisp II

Yum! I cut the sugar in half, added 50% more of all topping ingredients not including the sugar, cut the water in half, added a tsp of vanilla, and one of cinnamon to the topping. It was not watery at all.

Zucchini Saute

This is very yummy! The only change I made was adding garlic. Also, I served leftovers with lemon chicken pieces (heated) mixed with fresh avocado the next day. Just delicious~~!!!

Tuna Rice Casserole

I changed lots of things in this recipe, and loved it! First, I sauteed one onion and 4 garlic cloves on a pot. I added one large green pepper, a stalk of celery, and a can of tomatoes. To this I added 3/4 cup of rice, and one cup of water. i added two cans of tuna to the mixture. I added a dash of mustard seed, some thyme, some basil, and ground pepper. I let everything simmer for about 40 mins, untill it not longer looked like soup. I served it in a pasta bowl, sprinkled with ground pepper to taste, and salt, and shredded old cheddar cheese. YUM!!! just remember you need lots of pepper!

Easy Apple Crisp

Wow, I am really suprised at the way this turned out. I was expecting a cake like texture, but the "crust" is supprisingly crunchy. I cut this in half and only cooked it for about 30 mins as the edges were starting to turn dark brown. I didn't peel the apples as I prefer extra fibre. Overall, this is very good, although I would add some oatmeal to the batter next time as I like a crumbly topping.

Mini Cheesecakes I

I really wanted these to turn out, although the crust was very dry and burnt. The cheescake part was great. I think they may need to be cooked much less and butter should be added to the crust. I will make these again, as they are super cute, but I will probably use my regular cheesecake recipe. I topped half with whipped cream and blackberries and the other half with melted chocolate and slivered almonds.

Mediterranean Lemon Chicken

This was amazing... I repeat, Amazing!!! I served it with "Roasted Garlic and Asparagus" (also found on this site) Yum! I cannot explain how incredible these were together. I would suggest serving them with wild rice or fresh bagette with oil and balsamic vinegar on the side. I used chicken breasts and sliced them in thin strips and drizzled the sauce overtop. The meal was very easy and looked and tasted like something from a fancy restaurant. I highly recommend this! Thank you Leah!

Roasted Asparagus and Garlic

I served this with "Mediterranean Lemon Chicken" also from this site. YUM! I really loved them. These are very easy and look amazing. Thank you Robyn for a great side dish. BTW, I love the way the garlic turned out! I think I died and went to heaven! well.. almost.. teehee. This is a perfect side for a romantic meal for two. ;)

Outrageous Chocolate Chip Cookies

These are good, but not as great as I expected. This may be in part because I did not have any brown sugar and substituted honey. I also used natural chunky peanut butter, and substituted the white flour with whole wheat flour. I will be making these again, although next time I will used brown sugar, keep the whole wheat flour, increase the peanut butter, and add more chocolate chips (or maybe smarties). Overall yummy!

Stuffed Green Peppers I

I have made these several times and they have been perfect everytime with some little adjustments. I double the worcestershire sauce, add garlic with the onions, put the cheese on top of the stuffed peppers, and use tomato paste instead of soup with about a tablespoon of lemon juice. Fabulous comfort food and very healthy! Note: I have also used both ground chicken and turkey and also had great results.
