Whole Wheat Banana Nut Bread

This turned out fantastic! Very moist and tasted wonderful. Awesome recipe. I used 2 1/2 medium bananas (however many cups that made I'm not sure).

Baingan Bharta (Eggplant Curry)

This was so delicious. Rather than baking the eggplant I added it raw to the pot after cooking the onion and cooked it that way.

Yummy Vegan Chocolate Pudding

Slow Cooker Mediterranean Stew

This was very good. However I made a few changes: rather than tomato sauce and a fresh tomato I used canned diced tomatoes; I substituted the broth with 1/4 to 1/2 cup white wine and I used green beans instead of okra.

Broccoli With Lemon Almond Butter

I love the freshness of the lemon and the almonds bring an interesting texture to the dish. All of the flavours mix very well making a refreshing dish.

Macadamia Nut White Chip Pumpkin Cookies

These were very good. Rather than using wheat flour I used a 1:1 combination of white rice and potato flours. The cookies didn't last too long.

To Die For Blueberry Muffins

I baked these last fall for my friends and they all loved the muffins. They were so moist, kept well and were extremely easy to make. If only I could eat wheat...
