I've been a vegetarian (still eating fish/eggs) for about 5 years, and have decided to try out a plant-based, whole foods diet after watching "forks over knives". (It was recommended to me by a coworker, and I would recommend this for everyone to see.) I've been slowly making small changes to ease into it, and I've noticed the more healthful I eat, the better I feel. (Imagine that!) I'm on an exciting mission to explore new recipes that are meat & dairy free, and to enhance my cooking skills along the way.
My favorite things to cook
Currently I've been addicted to kale chips and I make them several times a week. I've also recently purchased a food processor, so hummus has been on the table a lot.
My cooking triumphs
I recently made an avocado pesto (vegan & soooo creamy) with whole wheat linguine. It was a big hit and really easy to make.
My cooking tragedies
Not once, but twice I have confused cheese and butter while searching through the fridge. The first time I was making chex muddy buddy mix, and realized that after I opened the microwave to find a glob of burnt cheese and peanut butter. (It was one of the worst burning smells I've ever smelled.)
