Brown Sugar Meatloaf

I tried the recipe with one significant modification, as per the advice of other reviewers. I put the meatloaf on top of a slices of bread to absorb the grease, and I spooned the brown sugar and ketchup sauce over the top, NOT the bottom. All that grease going into the sauce did NOT sound like a good idea to me.

Balsamic Bruschetta

Absolutely loved this and my husband just kept eating more. The only change I made was that I added a minced shallot and chilled it. I also sug-gest using 18-year balsamic vinegar--so delicious! Also I also brushed the bread slices with garlic-infused olive oil, and toasted in the oven oil side down until the bottoms just started to brown.

Weeknight Pork Chops

Exactly as advertised; quick, easy, tasty weeknight. I prepared as per the recipe except that I replaced half the cider vinegar with balsamic vinegar and made it more a glaze by adding earlier and letting it reduce. Like it!

Hasselback Potatoes

I liked this idea and technique a lot, but I substituted olive oil for butter. I will make this again, except I'll spread apart the slices as much as possible before adding the breadcrumb topping, for better penetration of the olive oil and seasoning into the potato. I think I'll also try some infused olive oils, such as garlic or Italian seasoning infused olive oil. I suspect this will become my go-to baked potato recipe once I tweak to just my taste.

Rosemary Pork Chops

I paid heed to the reviews that suggested searing the chops first, then baking covered with some of the marinade. It was good, but not so good as to become my go-to recipe for pork chops. I'm still looking for that.

Slow Cooker Chicken and Dumplings

The recipe as written couldn't be more than a 3. Pretty bland and way to "cream of chicken" flavored. But as a base, it's great. I used all broth instead of water and added celery and extra seasonings as suggested in other comments. It still needed more--I'll increase those seasonings next time. And there will be a next time. It's so easy. I cooked on high 4 hours, added the dumplings, and then another 1.5 hours, still on high.

Beef Barley Stew

I made this recipe in the crockpot, but otherwise as per the recipe, with one exception. I didn't add the roux to thicken. It was liquid, but so hearty it didn't need thickening. I liked it a lot and will make it again, but it is not a traditional beef and barley taste. If that's what you have a hankering for, this won't do it.

Almond Wild Rice

Superb. I made two alterations: I substituted craisins for the raisins, and then as I prepared it, I thought it needed one more ingredient for another flavor, texture, and color. I diced a Pink Lady apple and added it at the end, and that was the perfect touch. My husband kept saying " good rice" as he took more and more.

Annie's Fruit Salsa and Cinnamon Chips

I haven't tried the salsa yet, but I used the chip recipe with pumpkin cream cheese dip and adored it. Also works well (even better, I think) with pita pockets split in half. The pita holds up better to dip; less breaking as you're trying to scoop.

Quinoa Side Dish

I tried the recipe as given and found it a little bland. The second time I added the garlic, onion, and lemon dash with the vegetable broth to let it all cook together. Much improved. I served it topped with shrimp (prepared separately) and loved it. This will be added to my regular rotation for meals.

Angel Hair Pasta with Shrimp and Basil

Very good. Simple, easy, tasty. I followed others' suggestions and used mostly dried herbs, with a bit of fresh at the end. Red instead of white wine. Added heavy cream--an excellent addition.

Tomato Soup I

Absolutely delicious. My husband declared it the best soup he has ever had, of any kind. I made one small change to this recipe: I used diced tomatoes with basil, oregano, and garlic and I pureed it in a blender for smoother texture. This will make a frequent appearance in my weekend lunch menu.

End of the Line Ham Casserole

Just what I needed for using leftover Christmas ham. I used cream of potato soup (don't care for cream of celery) and at least a cup of milk, maybe more, because I really didn't think there was enough liquid. Also used a cup or more of shredded cheddar cheese, layered in with potatoes and ham, as well as on top. Turned out well, especially considering how sick of ham we are!

Excellent; went over very well for Christmas dinner. I'd never guess it was sugar-free, and that's the best compliment I can give it. I used the previous reviewer's suggestion for a crumb topping and that worked very well.
