Broiled Tilapia Parmesan

The time on this recipe is certainly true! I had dinner prepped and on the table in 20 minutes flat - that included some last minute thawing of my Tilapia! Will definitely be keeping this one!

Pork Tenderloins with Roasted Potatoes

SO easy! I didn't broil it at all, and since I used my convection, it only took about 35 minutes to cook a tenderloin that was about 1.75 pounds - more than twice as big as the recipe is scaled for. VERY tasty - this one is going on my "last minute" dinner recipe list.

Orange Roughy Parmesan

Wow...YUM! We have always been frequent tilapia and salmon lovers, but my husband asked me to get some orange roughy. I had never made it before, so this was the first recipe I tackled. It was SO good. It was both light, buttery and a bit sweet - VERY tasty. We should have had left overs, but we couldn't stop eating it!!

Avocado Steak

It might help to explain this dish as enchiladas without the torillas. Very yummy indeed! I had a ripe avocado and thawed steaks for dinner, but no plan. As the only recipe I could find using both, I was a bit skeptical. However, it turned out to be a HUGE hit! I took some other reviewer's tips and added garlic salt and shredded mexican cheese blend to the refried beans. I marinated the steaks in worcestershire and Montreal Steak Seasoning, as we usually do. I sliced the beef and piled it on top of jasmine rice, topped with refried beans, carmelized onions, avocado slices and thinly sliced tomatoes. A few slices of fresh jalepenos on my husband's, too. He came back for THIRDS.

Rhubarb Strawberry Crunch

Very yummy...I didn't have rhubarb, so I doubled the strawberries for this. I took it to a pot lock and everyone loved it! I recommend serving this with homestyle vanilla ice cream!

Spicy Italian Pork Cutlets

This was very good and very easy. I omitted the parsely b/c I had none, and I used a can of diced tomatoes since I didn't have a fresh one. I couldn't tell the difference. It was a nice spin on regular old pork chops!

Easy Garlic and Rosemary Chicken

So good! I soak my breasts in plain white vinegar for about 15 minutes beforehand to make then juicier. Then I did as the other reviewers suggested and added enough chicken stock to the pan to cover the bottom. This is important I think because it keeps the breasts from drying out. My very picky 6 year old meat eater LOVED it - and he won't even eat a chicken nugget! Total bonus that this is a very low fat dish.

Tex-Mex Turkey Soup

Simply wonderful!! I used left over rotisserie chicken and some left over grilled chicken breasts in place of the turkey. I also subbed 1 can of Rotel for the salsa, 1 can of southwestern corn and used 3 cups of chicken broth, 1 cup water and 2 bouillon cubes. Amazing. The cilantro is vital for that authentic Mexican flavor. Even better the next few days. This is going to be my new standby for using up the leftover rotisserie or roasted chicken!

Chicken, Asparagus, and Mushroom Skillet

This was excellent! The only change I made was that I was (gasp!) out of olive oil, so I used lemon olive oil that I happened to have from a stocking stuffer. I actually think that improved the dish. Between than and the lemon juice, it had a wonderful light citrus flavor. I, too browned the chicken in the olive oil and butter first to brown them. I also removed the chicken while the spices, garlic and vegetable cooked, then I put the chicken back in and covered the dish and removed it from heat and let the flavors soak into the chicken. I served it with salad and egg noodles. Very yummy! I'll be keeping this one in my arsenal.
