Jamie's Cranberry Spinach Salad

WOW! Yum yum yum yum! This was the best salad I ever made AND ever tasted! I loved it so much that I hope to make it often enough to never need to look at the recipe each time! The dressing is so good, too. I cut back the amount of sugar a little and it was still very sweet, but I have a sweet tooth, so that was good for me. This is going to become a signature salad for our family, I'm sure!!!

Peanut Butter Candy Bars

Usually I make a new recipe once or twice. Not this one - I have made it and have been requested to make it over a dozen times! I recommend using natural peanut butter - the coarser consistency makes the peanut butter part more like a peanut butter cup - YUM!!!!!! Also, I only put in about 3 to 3.5 cups of sugar - it is just as sweet!

Betty Crocker's Easter Bunny Cake

The creative aspect of this recipe is great and VERY easy to do. The cake mix itself is OK, but I HIGHLY recommend making your own cream cheese frosting rather than using the fluffly white frosting. Using a cream cheese frosting is much better for a carrot cake, otherwise it is just too sweet combined with the coconut flakes. This was a visual hit on Easter Sunday, but not much got eaten.

Easy Beef Stroganoff

Very good recipe. I took the previous reviewer's suggestions and added 1/2 cup of beef broth (I used bouillon) and decreased the amount of sour cream. I also added about 1/2 tsp of chili pepper and used leftover steak tips (yum) instead. My hubby LOVED it and it had just the right spice (we love spicy).

Mom's Buttercream Frosting

Zucchini Pie

This was great. My 2 year old son who hates squash ate some of it - and that is a lot! I actually made two pies by doubling the recipe and used both shredded zucchini and carrots - a very colorful arrangement! I also used gruyere and cheddar (2:1) and it was very tasty!

Aunt Carol's Apple Pie

I made this pie twice in less than 7 days - and had never made an apple pie before, EVER! I got RAVE reviews of it, and even managed to forget the butter the second time and it still was perfect (and lower in fat!). I use either frozen or boxed crusts and it makes for a very quick and easy dessert. A real keeper! Don't forget the ice cream!

Chicken with Garlic, Basil, and Parsley

This was easy and good. I soaked the chicken in vinegar for about 30 minutes (longer is better, though) before preparing in the pan. It made them juicier. I also did what others suggested and added about 1/2 cup of shredded mozz during the last 15 minutes. That made the dish.

Awesome Slow Cooker Pot Roast

This was OK. I think I need a bigger crock pot - a 5 1/2 lb pot roast took up almost the whole thing (I think my cooker is 5 qt). The pot roast should really be flipped half way because mine was well done on top and not done enough on the bottom.

Sesame Asparagus

This at least gave me another idea for an ingredient to add to our common asparagus. I am a sesame lover and I'm surprised I hadn't thought of this on my own. I found it easiest to dry-toast the seeds in a non stick saute pan, and letting them cool for about 5 minutes before adding butter and garlic. This way the butter melts easily on the still warm seeds and you can allow it to stand for a few minutes while your asparagus is cooking. Hubby liked it, I loved it AND my 2 year old loved the 'sesame sticks'.

The time on this recipe is certainly true! I had dinner prepped and on the table in 20 minutes flat - that included some last minute thawing of my Tilapia! Will definitely be keeping this one!

Awesome Roast Beef

It may have been what I did, but my pot roast came out tough and flavorless. We are on a low carb kick, so I did not cook any potatoes with the roast, which I will never do again. Pot Roast and potatoes go hand in hand. I will also add minced garlic and some other spices next time to give it more flavor. In all, a good recipe, but needs spice.
