Pork Tenderloins with Roasted Potatoes

SO easy! I didn't broil it at all, and since I used my convection, it only took about 35 minutes to cook a tenderloin that was about 1.75 pounds - more than twice as big as the recipe is scaled for. VERY tasty - this one is going on my "last minute" dinner recipe list.

Penne with Chicken and Asparagus

This was fairly good. I wasn't jumping up and down about the flavor. I even boiled my asparagus in both chicken stock and in the pasta water before boiling the pasta (half and half). I used some of our famous basil and oil mixture in place of some of the olive oil. That definitely added flavor - I wonder how much more bland it would have been without it! In all, it wasn't a bad dish, but I would certainly add some herbs and spices next tiome to give it some added flavor.

Orange Roughy Parmesan

Wow...YUM! We have always been frequent tilapia and salmon lovers, but my husband asked me to get some orange roughy. I had never made it before, so this was the first recipe I tackled. It was SO good. It was both light, buttery and a bit sweet - VERY tasty. We should have had left overs, but we couldn't stop eating it!!

Mexican Rice II

This was pretty good. I only had jasmine rice, which I wouldn't recommend, because it added a sweetness that countered the dish a bit. But it was still OK. Also, I didn't have tomato sauce and I wanted to add green chilies, so I substituted a can of rotel in. I used chicken bouillon to make the stock and it came out nicely. Because I boiled the water to dissolved the bouillon, the boiling time for the rice was much less and it was done much faster than the recipe stated. I'll make this again, but with regular long grain rice.

Avocado Steak

It might help to explain this dish as enchiladas without the torillas. Very yummy indeed! I had a ripe avocado and thawed steaks for dinner, but no plan. As the only recipe I could find using both, I was a bit skeptical. However, it turned out to be a HUGE hit! I took some other reviewer's tips and added garlic salt and shredded mexican cheese blend to the refried beans. I marinated the steaks in worcestershire and Montreal Steak Seasoning, as we usually do. I sliced the beef and piled it on top of jasmine rice, topped with refried beans, carmelized onions, avocado slices and thinly sliced tomatoes. A few slices of fresh jalepenos on my husband's, too. He came back for THIRDS.

Rhubarb Strawberry Crunch

Very yummy...I didn't have rhubarb, so I doubled the strawberries for this. I took it to a pot lock and everyone loved it! I recommend serving this with homestyle vanilla ice cream!

Playgroup Granola Bars

These were VERY good. The only reason I didn't give them a 5 is because they do get rather hard to chew after a day, but are still very tasty. We break them up and put them in plain yogurt and it softens up and makes for a yummy snack. We used Craisins instead of raisins, too. YUM!

Black Bean and Corn Salad II

I used this as a basis for what turned out to be super yummy! I didn't have some things, so I used beans, corn, cukes and grape tomatoes. The dressing didn't have enough kick for us, so I added some white wine vinegar and a tiny bit of sugar and it was great. We tosed this on a bed of spring greens and topped it with herb-crusted seared yellowfin tuna. It was SO GOOD!

Thai Kabobs

I didn't have any chicken, so I used 2 pounds of pork tenderloin for this. It was a LOT of meat, so next time, I'll halve the recipe. Everyone thouht the flavor was excellent, too.

Spicy Italian Pork Cutlets

This was very good and very easy. I omitted the parsely b/c I had none, and I used a can of diced tomatoes since I didn't have a fresh one. I couldn't tell the difference. It was a nice spin on regular old pork chops!

Three Bean Salad I

This recipe was almost perfect. I say almost because upon first taste, it just didn't have the zing I like in a good bean salad. I added about 2 tablespoons extra sugar and then I added about 1/4 cup apple cider vinegar. That made it perfect and man oh MAN! this salad gets better and better as the days pass!

Pam's Chicken Enchilada Casserole

This was very good. I didn't even have enough enchilada sauce or sour cream and it was a huge hit with the family. It made a LOT and for a family of 3, this will feed us for at least 3 or 4 meals. This would be a great potluck or super bowl party recipe.
