Orange Cornish Hen for Two

Lactose Free Corn Chowder

Tried this recipe as is,did not like it.I found the potatoes mushy,and there really wasn't much taste.IMO it does not need 2 hours to cook.So i tried it again with a little tweeking.I boiled the potatoes in chicken broth on medium heat till not quite cooked about 10 min.Then i added 1/2cup peas, 1cup chopped celery,1 cup chopped carrots,1cup green onion,2cups corn and a bit of garlic.I added 1 cup of Silk Milk,fresh parsley,little salt and pepper,and simmered till cooked,all was done from chopping the veggies.till cooked in a little over 1 hour.By adding the Silk it gave the soup a bit more body,so i will make it again.

Garlic Quinoa

Made this for lunch, but cut it back to 2 servings. My first time having quinoa, i used lactose free margarine and my own chicken broth. I added peas for color. I Really liked it, my husband not so much. Guess it's not for everyone. Even though i found it took 5 minutes more to cook i gave it 5 stars cause its easy and tasty. Thank you for this recipe, i will be making it again.

Tuscan Fava Bean and Orecchiette Pasta Salad

Cathy Myers-I love salads, and like trying different kinds. This salad is very tasty and easy to make. I used Italian Broad Beans, as those were the beans I had. Thank you Cathy for sharing this wonderful recipe.

Sweet Bell Pepper Rice

We love rice, and this one is very good. I used Arborio (Italian rice) personal preference, and fresh basil instead of the dried. With this I made mild Italian Sausage, next time I will double the recipe so I can have leftovers. Thank Joey Joan this is a keeper.

Pasta e Fagioli ala Weeble

So close to mine that I had to try this soup. It is very good, I added ground chicken meatballs, cause we like some meat in soup. I used grated goat cheese(lactose intolerant). Very nice flavor, no leftovers. Thank you weelbe for this tasty soup..

Baked Teriyaki Chicken

Very good, made it with chicken parts. We enjoyed this recipe, I found some low sodium soy sauce and used that on the chicken. I don't care much for soy sauce, but on this very tasty. Will make again.

Beef Stroganoff III

This is wonderful, had to make some changes( lactose intolerant) so I subbed the butter with lactose free margarine and the sour cream with creamed goat cheese mixed with lactose free vanilla yogurt. It was excellent and the flavor was so good, served it over egg noodles. I made this for some friends we had over and it was loved by all. A keeper for sure. Thank you Donna for this recipe.

Carrot Oatmeal Muffins

This is a 2 thumbs up muffin recipe. I made it as written, except I did not use the cream cheese (lactose intolerant). I made a double batch because I like to have some for the freezer and they turned out excellent. Thank you westcoastmon these are a keeper.

Butternut Squash and Curried Apple Soup

This soup is a must try. I had to sub the butter for lactose free margarine , and did not put whipping cream in my soup bowl. Made this for company and they all loved it. Thanks for a great soup recipe Volleyballmom.

Teriyaki Beef with Ginger

This is a very easy and quite tasty dish. Only thing I did different was put it in the oven at 300 degrees for the last 2 hours of cooking time. We had it over rice. I will be making this again, it's a keeper in my house. Thanks for the recipe Nadine.

Onion Soup Bread I

This is very good, I did tweak it a bit. I used lactose free margarine, and added garlic(we like garlic). I put it through my food processor for a few seconds just to make it smoother. I used Italian Flat Bread for this wonderful recipe. This will be eaten with every pasta dish we have. A keeper in our house. Thanks Nadine for sharing this with us.

The Girls' Chicken Sandwiches

Had to do a little tweaking on this (I'm lactose intolerant . I used mayo. instead of the poppy seed dressing, did not use cream cheese used orange marmalade, it went real well with the strawberries. Enjoyed this very much. Thanks HotGrandma.
