Italian Sausage Soup with Tortellini

Simply, amazing!! Everyone have served it to LOVED it! Even my persnickety Italian father went back for seconds! Definitely add more broth, I also added more wine, garlic, onion, and tomato sauce. Great, easy tasty recipe!!

Ground Beef Shepherd's Pie

This was great!! I did tweak it a bit. First, I only misted a pan to sauté the onions and used only 8% lean ground beef. That was enough oil/fat to sauté the onions. Then in the beef I added about 2-3 ounces tomato sauce, and seasoned salt in addition to the other seasonings. In the mashed potatoes I used nonfat milk and added about two tbsp light sour cream. My children thought this was the best version yet!!

Salmon Cakes II

Yes, this was excellent! Even my seven year old loved them. I used leftover salmon from the grill instead of canned and it worked just fine. Also I used only about a tablespoon of butter and olive oil as needed when doing them in the pan to cut down on fat and calories. will definitely add this to my repertoire!!

Ranch Chicken Tacos

Delicious and EASY dinner! I used lowfat ranch dressing and sour cream. I don't think there was a difference and you save fat and calories. We also used flour tortillas- worked just as well too!

Chicken Puffs

Very Good and fun to make. Paired with a salad and a veggie, this was my main course!! Did not need butter, but just a splash of milk to make it stirrable. Definitely making these again!!
