Wazzu Tailgate Chili

Followed the recipe except I left out the pork. The seasoning was perfect for me - spicy without being too mild or or overwhelming - just right with great flavor!

Ukrainian Red Borscht Soup

Wonderful recipe. I had Borsht at a Russian restaurant and loved it there. This was a lot of work, though, especially shredding the beets - maybe there is an easier way. I made the vegetarian version, and added some salt and spices to make up for it.

Quinoa Tabbouleh

I love this! I omitted the tomatoes, and used all organic ingredients (including fresh squeezed lemons!). Quinoa is a great food and this is a good way to have it. I've made it twice now and the second time I used my hand powered food processor (forgot the name of the durn thing, but they sell them at state fairs and such). This will become a staple recipe for me.

Red Lentil Curry

Very good, and looking forward to making again with all the good variations I'm reading in the other reviews. There are so many types of curry paste to use, so just changing that alone will give a different twist. I left out the teaspoon of salt thinking I can add it later if needed, but I didn't add any (the curry paste was quite salty).

Chickpea Curry

Loved it. I took most of the previous suggestions - omitted chickpea can water, added a can of diced tomatoes with juice, used ground cinnamon instead of sticks. Next time I'll add a little more water or tomatos to make it saucier. I also only used 1/4 tsp cayenne.

Fruit Salsa

Unique salsa recipe. The flavor is interesting (in a good way). Downside is color - kind of gray/green. Just be sure not to chop it too fine.

Garlic Chicken

Ooooh yeah - that's what I'm talkin' about! Great basic recipe! I used the frozen chicken breasts so I went by the package directions of 375 oven for around 45 mins or so. Perfect!

Seared Scallops with Tropical Salsa

This one will impress! Great colors - great presentation! Great taste too! I like jalapeno's, but that could be left out if your diners are kids or don't like them. I'm going to make a big batch of the salsa and use it with less expensive fish like tilapia or cod or something and serve it to a big family group.

Best Spaghetti Sauce in the World

Very simple, fast (it helps to have a food chopper/processor for the tomatos) and really tasty. Now I have a use for that bottle of vermouth that's been around for awhile!

Spicy Bean Salsa

I brought this to our Christmas dinner and it was a huge hit with kids and the adults. I think the genius ingredient of this recipe is the italian dressing - not something that you normally think of adding to salsa, but boy does it make it good. Lot's of good improvising possibilities with this, too. I'll be making this from memory many times to come!

Frank's Famous Spaghetti Sauce

Simple and very tasty. I used diced tomatos instead of stewed. This is a good recipe to experiment with. I usually add red wine vinegar to spaghetti sauce, but I didn't miss it here.

White Chili with Ground Turkey

This was very tasty! I substituted great northern for the cannellini beans, and served it over basmati rice - mmmmm. We all liked it, but the only negative is that the color is not the most appetizing color - kinda greenish gray. I will make it again though!
