Butternut and Apple Harvest Soup
Wasn't going to rate because I made so many changes to make it aip friendly and I was out of some thing but it was so delicious I just figured I'd note what I did. Changed white potato to sweet potato and had no carrot so I added a second sweet potato. I'm sensitive to onion so I just left thst out but left the leek, I only had one cup of squash so I added a cup of pumpkin, nutmeg is not allowed on my diet so I added cinnamon and ginger instead and used coconut milk instead of cream. Loved this soup

Old Fashioned Strawberry Pie
Delicious. I used frozen strawberries that thawed with a ton of liquid so I followed the advice of someone else and added 3 tbsps of corn starch to thicken. I added 1 cup of sugar and that was perfectly sweet for me.

Chicken Quesadillas
I tweaked mine a fair bit but based it on this recipe. I made my own tortillas, then I fried red & green peppers and onions together in a spoon of bacon grease. I made my own fajita seasoning something like paprika, garlic powder, sugar and cumin & dumped it all in there along with some left over roasted chicken from last night. I also gave it a healthy dose of diana sauce and mixed it all together. Spread some sour cream on the bottom tortilla, dump a scoop of chicken mixture and some shredded cheese on top then the top tortilla. I didn't bother reheating them all together since the tortillas were still warm from cooking.
