Soy Sauce Chicken

The ginger/garlic combo was tasty, but the sauce was a bit too salty for us. I added some lightly steamed broccoli to the chicken and sauce and cooked it for ten minutes in the sauce, which never thickened. The broccoli was fantastic! I will make this again, perhaps with a bit less soy sauce or a lighter soy sauce. I like that it has an oriental flavor without having to buy exotic (infrequently used in our home) ingredients.

Lemon Cupcakes

As written, it doesn't have a very lemony flavor, but it did turn out moist and light for a made-from-scratch cake. With the right lemony frosting, though, it's a yummy treat.

Asian Chicken with Peanuts

This recipe was ok but seemed to need more salt/soy sauce. I would guess if I had used canned chicken broth or bouillon this would not be true as both are very salty and usually have MSG which would affect the flavor.

Oatmeal Chocolate Chip Muffins

In spite of my hurry and failure to read the directions all the way through before starting, these turned out very tasty and were gobbled up by all my boys, with requests for third and fourth muffins. They said it was like eating a chocolate chip cookie for breakfast. I doubled the recipe and used a whole bag of chocolate chips (12oz) and added 2t. vanilla, but I also (accidentally) didn't divide the brown sugar and chopped pecans so all of it went into the batter instead of half on top. I used about 1.5 cups of very finely chopped pecans, which seemed to go unnoticed with the texture of the oatmeal, which is a good thing in our house. A double recipe (with my mistakes) made about 32 muffins.

German Spaetzle Dumplings

Very quick and easy. (It took longer for the water to heat up than it did to make the dough.) I used a bit more butter than the recipe called for and added a bit of salt before serving.

Cinnamon and Lime Chicken Fajitas

I made these without the potatoes for a low carb version and loved it. The first time I used bottled lime juice and I measured 1/3 cup. The second time I added about 3 Tablespoons more than previously and it was outstanding.

Winter Fruit Salad with Lemon Poppyseed Dressing

The combination of fruit, cranberries, nuts and cheese with the dressing make this a sweet salad with just a little tanginess. Excellent flavor and fast/easy to put together.

Ultimate Maple Snickerdoodles

These cookies were just the right sweet to take to a Christmas party - no one else had made anything like them and they were a big hit. I doubled the recipe and had put some away for our family to eat later, but they were best eaten within 3-4 days. By day five, they were too hard for us to eat. These are especially yummy right out of the oven!

Yellow Squash Casserole

I made this for Thanksgiving this year and got lots of compliments. It's tasty and doesn't have canned soup like several others I've tried. I assembled it the night before and baked it while the turkey was being carved. Delicious.

Authentic Mexican Tortillas

Goulash Supreme

Fast, easy and delicious. I used whole wheat pasta and so added a 15 oz can of tomato sauce and about 1/4 cup water, but made no other changes. The spices seemed just right to us. Everyone gobbled it up... even our three-year-old.

Cocoa Apple Cake

A very moist cake, for certain. It wasn't quite as chocolately as I had hoped. I would increase the chocolate chips and probably the cocoa, too. It was tasty, but I felt the result wasn't worth the effort of peeling, coring and grating the apples.

Jay's Signature Pizza Crust

Excellent crust. It was crispy on the bottom and fluffy in the middle, not gooey or soggy. I substituted a little whole wheat flour for part of the white flour and doubled the recipe using my food processor to mix the dough. My four children devoured it. My five year old said he liked it better than delivery pizza.

White Bean Chicken Chili

Amazing Whole Wheat Pizza Crust

I used to only have one whole wheat pizza crust recipe that was good enough to please our family. Now I have another. This crust is crispy and very to easy to make, especially with a food processor. I've made it several times and it was great even without the second rising time. I also froze a batch and after thawing, rolled it out in the pan. I let it rest for about 30 minutes and it still turned out wonderfully!

Very addicting and super sweet treat. Best eaten the same day they are made, but that hasn't usually been a problem for us. I have made these successfully with less peanutbutter - 1/4 to 1/3 cup.

Pumpkin Chocolate Chip Muffins

This is one of my children's favorite muffins. The flavor combination sounded strange at first, but now they are hooked and request these more often than any other kind of muffin I make. These are also delicious without the chocolate chips. I use frozen fresh pumpkin which I process myself and they always turn out perfectly.

Fruity Curry Chicken Salad

I'm not a big curry fan, but this was excellent! The apples and raisins give it just the right sweetness and the pecans give it a little extra crunch. It's a nice change from regular chicken salads and worth the time and effort.

Banana Cream Pie IV

A delightfully light, not too sweet, cool treat. I made this for July 4th, using sugar free pudding and a half container of light whipped topping. The one banana was not overpowering and the cinnamon and carmel gave the pie a new yummy twist to the same old pie. My husband, who loves banana cream pies, would have liked more bananas, but said he liked the cinnamon and would definitely eat it again. This recipe was extremely quick and easy.
