Soy Sauce Chicken
The ginger/garlic combo was tasty, but the sauce was a bit too salty for us. I added some lightly steamed broccoli to the chicken and sauce and cooked it for ten minutes in the sauce, which never thickened. The broccoli was fantastic! I will make this again, perhaps with a bit less soy sauce or a lighter soy sauce. I like that it has an oriental flavor without having to buy exotic (infrequently used in our home) ingredients.

Lemon Cupcakes
As written, it doesn't have a very lemony flavor, but it did turn out moist and light for a made-from-scratch cake. With the right lemony frosting, though, it's a yummy treat.

Oatmeal Chocolate Chip Muffins
In spite of my hurry and failure to read the directions all the way through before starting, these turned out very tasty and were gobbled up by all my boys, with requests for third and fourth muffins. They said it was like eating a chocolate chip cookie for breakfast. I doubled the recipe and used a whole bag of chocolate chips (12oz) and added 2t. vanilla, but I also (accidentally) didn't divide the brown sugar and chopped pecans so all of it went into the batter instead of half on top. I used about 1.5 cups of very finely chopped pecans, which seemed to go unnoticed with the texture of the oatmeal, which is a good thing in our house. A double recipe (with my mistakes) made about 32 muffins.
