Black Bean and Corn Salad II

I can eat this anyday! It's especially refreshing in hot sunny day. I'm glad I went the extra mile to get cilantro as it adds a very nice touch to the flavor.

Japanese Chicken Wings

A little too sweet for our taste even though I've cut down the sugar to 3/4. But it's still delicious! The chilli flakes really adds extra punch to this dish.

Easy Apple Coleslaw

Very refreshing! This recipe is so versatile, you can add many crunchy fruits and veggies to it. I added fresh pineapple slices to mine, and a little bit of green onions. I love coleslaw and find this one to have a good balance of creaminess, sweetness and tanginess. Will definately make again.

Rum Raisin Bread

I've made this bread many times now using my trusty bread machine, and it's a hit every time. Last night I decided to make another loaf but didn't have heavy cream on hand, so I substituted it with plain yogurt. It's much softer and the flavor is wonderful as usual. I won't be buying any store bought raisin bread for a long long time!

Snickerdoodles II

I didn't have margarine so I used all butter. I also ran out of vanilla. But these cookies turned out so good!! I took them out of the oven at 8 minutes while they're still soft, but firmed up and became chewy once cooled. The only thing I'll change is to cut down a little on the sugar. Will definately make them again.

Bread Machine Bagels

It's my first time making bagels and I'm impressed! I cut down the number of bagels yield to 8. Bread machine makes it so easy and the bagels are really delicious!

Six Egg Pound Cake

I like the texture of this cake as it's lighter than usual pound cake. Followed others' suggestion of spliting the batter into 2 pans. I'm glad I did coz it rises high! I also mixed 1/4 of the batter with cocoa powder n chocolate chips for a "chocolate surprise". Will add lemon or orange zest next time to add more flavor. Overall a good cake.

Dutch Babies II

I made this baby for for my special someone on Valentines' Day weekend. I don't have cast iron skilet, so I used 8" round baking pan instead. It turned out beautifully! For the final touch, I topped it w/ strawberries sweetened with sugar, dusted some powdered sugar, and sprinkled toasted almonds. It look really elegant and like something you took much time to prepare. We totally gobbled it up in no time. Will definately make it again!!
