Slow Cooker Cilantro Lime Chicken

There are only 2 of us, so half the chicken, salsa, and low sodium taco seasoning. I used 4+ tbsp. of cilantro and a whole small lime. It was plenty of wet contents for the amount of chicken. I added 3 tbsp. of chopped onion and half a drained can of corn (no salt added). The corn added a lot of flavor. Cooked it on low in a crock pot for 2 hours and that was plenty then shredded it. We ate it in whole wheat tortillas and/or baked Tostitos. Low calorie meal but watch the sodium! Whoever said omitting taco seasoning was a good idea was very wrong. It adds most of the flavor to the meat itself.

Slow Cooker Buffalo Chicken Sandwiches

I cooked it in a crock pot for 4.5 hours (6 breasts, 1 whole packet of Italian dressing and Frank's Original hot sauce). After 4.5, I shredded it and added 6-7 tbsp. of butter so that it was more like real, NY style wing sauce. I let the shredded chicken sit in the sauce on warm for a few hours before serving it. We ate it again the next day and it was even better. I don't even think it needs to be on a roll, but I served it with shredded cheese and small rolls.

Amazing Pork Tenderloin in the Slow Cooker

I made this exactly as the recipe calls for and it was superb! I would go with less minced garlic for crusting it on the tenderloin next time (and I love garlic). I used the remaining juices as an au jus as recommended and it was a nice treat! I served it with a sweet potato and dipped some of that in the au jus as well. SO easy and I will be making it again!

Spicy Garlic Lime Chicken

Spicy and I loved it! I omitted salt, parsley and thyme (was out of thyme and parsley). I added oregano. I used healthy balance oil instead of butter. This would make a great sandwich meat too (for a Cajun chicken type of sandwich). I will definitely make it again and probably on the grill next time! I served it over salad.

Parmesan Pork Tenderloin

Simple and delish. I try to make healthier dishes for eating at home and this was right up my alley. I took the advice of some others and put a marinara over the top so it was more like chicken parm. I used a 0.9lb tenderloin and had plenty of the breading mixture left over. The zucchini was good but I added more oil to the pan for it and I won't do that next time. I ate the leftover pork slices the next day cold with no sauce on them and they were great!

Becky's Easy Cilantro Lime Rice

Good flavor and zangy. Not mind blowing but still good. I used healthier brown rice and perhaps that was the issue. I saved half the mixture on the side because there were only two of us eating it and I didn't want to make that much rice. We actually used the chile pepper mixture as a salsa on some other dishes and it is SO good!

Szechwan Shrimp

Delish, easy to make and low calorie! I followed the sauce exactly as recommended except for substituting lite soy sauce. I added cut up asparagus. With adding a veggie, I would 1.5X the sauce next time. I used small shrimp. Served over jasmine 90 second (Uncle Ben's) rice and it was very filling! Only 175 calories per serving if you sub lite soy sauce and add asparagus (+210 for a serving of the rice)!

Sweet and Savory Kale

I made the full recipe, strained most of the remaining liquid and divided it into thirds to eat as 3 lunches instead of a side. Used all measurements exactly. Definitely enough Craisins. Used the following subs for health or convenience: low sodium chicken broth, white vinegar, 50% less sugar Craisins. I only added almonds just before eating (2 Tbsp). Followed cooking directions exactly. The vinegar could be slightly less. This was a great way to get kale into my diet and it fills you up. Accompanied it with a slice of wheat toast. I'm watching calories via MyFitnessPal, so divided into thirds with all substitutions, it's about 230 calories and 288 with a slice of bread.

Mashed Sweet Potatoes

I served these in cupcake tins at a pot luck. Made the potatoes as directed then put them in cupcake tins and broiled to crust a little bit of brown sugar on the top (mostly for looks). Very sweet, almost too sweet for me, but everyone at the party was VERY complimentary!

Boilermaker Tailgate Chili

I didn't use the bacon bits and forgot the celery. I used Frank's Hot Sauce instead and doubled it (more flavor, but less spicy than Tabasco). Other than that, I followed all other recommendations.

Awesome Spicy Beef Kabobs OR Haitian Voodoo Sticks

Even better the next day! I used half the cayenne as recommended (and I love spice) and it was plenty. Whipped up some low fat sour cream + garlic powder for dipping. Veggies marinated in the same spicy marinade could have soaked for less time as they were also spicy. Only left it in for two hours.

Grill Dough

I cannot bake (anything) and this is the first dough I've ever made (successfully). I did have to add more water than the recipe called for. With only the recommended amount of water it was a bit dry and pizza dough should be slightly moist and easy to ball. I only let it rise for about an hour (covered it with a wet kitchen towel while rising). I grilled it on the recommended heat for 3-4 minutes on each side. It's important to grill one side, remove it from the grill and add toppings to the already grilled side and then put it back on to finish grilling. Very easy and quite good!

Chicken Souvlaki with Tzatziki Sauce

This marinade is so simple and easy to make yet it adds great flavor and zing to the chicken! Perfect for summer grilling. No changes to the marinade at all. I made my own tzatziki- very similar except I do not add vinegar or oil. I do add one tbsp. of lemon juice, though.

Curry Stand Chicken Tikka Masala Sauce

This was pretty good but I had JUST had chicken Tikka Masal from an authentic Indian restaurant and it wasn't AS good. I wanted to compare the two. I didn't use heavy cream (I used milk), which I am positive made a difference. Even with the HC, I would say it would get 4 stars. Good but not as good as other Indian recipes on here for sure.

Grilled Bell Peppers with Goat Cheese

Easy and good recipe. I served them as an appetizer for a small BBQ. I had the lemon pepper in a grinder and I ground it too large, so I will do very finely ground seasoning next time. I actually baked them almost all the way and threw them on a the grill to heat them up when we arrived at the party. They would have still been very good without grilling them.

Hawaiian Chicken Kabobs

This is so good! Not too sweet. I didn't use sesame oil because we didn't have any, so I used a healthy balance oil. I used fresh, minced garlic instead of powder. I marinated the chicken for 7 hours and wouldn't do it for less. I took the advice of other reviews and turned the marinade into a baste. Lastly, I forgot to marinate the (fresh) pineapple, so I just brushed it with the baste as we grilled and it had plenty of flavor, especially when combined with the chicken. I will make this again and again because it's amazing + very easy.

Mediterranean Turkey Sliders

I love Meditarranean food and these were delicious! These aern't exactly authentic, but if you love feta and such, they are wonderful. I left the sun dried tomato out because I'm not a huge fan. I made my own Taziki and used whole wheat wraps instead of buns.

Bob's Mexican Stuffed Chicken

Very good. I love the crunch. I didn't have fajita seasoning, so I used taco seasoning. Good overall. I put too much filling in and couldn't fold it over, but I will next time because the cheese on top would be great.
