Homestyle Stuffed Peppers

Reviewed: Feb. 17, 2012
Good recipe but I like using yellow or orange peppers because of the sweeter taste. Green peppers have a bit of a bitter taste to me

Award Winning Chili Con Carne

Reviewed: Oct. 24, 2011
Used 1 can of beef broth instead of the bouillon cubes. They are to salty. Used 3 tbs of new mexical chille powder and eliminated the hot sauce, added a little coumin and coriander powder. Good recipe, just have to adjust to what you like

I make this rotisserie chicken using Western North Carolina Vinegar Barbeque Sauce which has butter in it. You can find the recipe on alrecipes. I do the usual tie the legs and wings and use indirect heat and try to maintain 350 degrees on my weber

Boozy Birdy

Reviewed: May 18, 2011
It was very good and I didn't change anything but to reply to boaters comment about using the merinade over again. It's okay to use it if you boil at a high enouth temp to kill any bacteria from the chicken. If your worried about bacteria from from chicken why eat it. The cooking destroys the bacteria

Green Eggs and Ham Breakfast Sandwich

Reviewed: Mar. 11, 2011
A friend of mine that I use to work with, His wife made this for his lunch and she always made extra for us gringos. She used flour tortillas and also added diced potatoes. I can still taste them today and everytime I go visit them in Arizonia I still request that Mary makes them for me. ogreugly

Corned Beef and Cabbage II

Don't use garlic powder but use real garlic. Garlic powder has a chemical taste to it. as does any of the powdered spices.

Uncle Earl's NC BBQ Sauce

Reviewed: Feb. 24, 2011
Made this sauce but did change the 1 cup of white sugar for 3/4 cup brown sugar. I like the taste of brown sugar over white. I did ribs in the oven using this sauce, turned out very good.

Yummy Roll Ups

Reviewed: Feb. 20, 2011
I agree with Deb. I look at a recipe and judge it on it's merits Then I might change things to suit my own tastes but I'm not going to give a bad rating to a recipe because it's not the way I would make it.

Jammin' Tarheel Chili

Reviewed: Jan. 30, 2010
Why do people use celery and so much cuman and coreander in chili. I use between a 1/8 to 1/4 of a tsp, just enouth to give it a hint but not over powering. I don't use celery at all.

Caramelized Baked Chicken

Reviewed: Jan. 26, 2010
Why do people think they have to use boneless meat. The bone is where the flavor is. otherwise you might as well take your shoe off and douse it with sauce, cook it and eat it.

Southwestern Turkey Soup

Instead of vegetable broth and shreaded turkey I would cook down the turkey carcass and use what turkey you get off the bones and the broth as a base for the soup

Pork and Sauerkraut Stew

Reviewed: Feb. 9, 2009
Drain the juice from the kraut and replace it with chicken brouth. Cuts the sourness of the kraut. Use jarred or packaged sour kraut, not the canned. The canned picks up the taste of the can.

Spicy Refrigerator Dill Pickles

Reviewed: Apr. 18, 2008
I made a batch of these pickles and everyone I gave then to really like the pickles. But you need to cut back on the sugar. I made a double batch of brine and I only used 2 Tbs of sugar and I also used jarred jalapeno pepper in place of red pepper flakes. I don't care for red pepper flakes. I used about 7 or 8 jalapeno slices per jar, You can do anything you want for the heat.
