Buttermilk Pancakes II
Perfect recipe. I added 1 addtl TBSP of sugar and nothing more. As others have stated you do not want to over mix this recipe. When you put dry into wet, mix slowly 4-6 folds until you see it's incorporated. It should be lumpy and almost like a beginning paper mache mix. I was able to make 10-12 Texas size pancakes. I cook for 30 seconds on each side over low. You know the pancake is ready to flip when all sides are slightly bubbling. I have added fresh blueberries which takes the recipe to a whole different yum factor. I pour the mix in the pan and immediately add fresh blueberries to the uncooked side. Once the pancake is flipped it seals in the berries. I fed myself, son, daughter, mother and hubby with this recipe. It has been my go to for years. If the recipe is not turning out, it is not the recipe, it is an error on the preparers end. My first time I over mixed and they did not rise and were limp cakes, nothing special. Over mixing is the #1 cause of this recipe failure. I have never used room temp items as my family loves to eat not wait...lol They always rise beautiful thankfully. I have found not to mix this recipe until I begin making them as the pancakes tend not to come out as well if I premix. Someday I will freeze and try that as others have had success. This recipe takes time, but it is worth the little effort. TY for sharing a simple but delicious recipe!

Mexican Wedding Cakes II
I added the following changes after making the recipe as written the first time. The original way was good but I wanted to modify a bit so I used 1 full tsp vanilla as I love the flavor. Then I used pecans instead of walnuts as I'm surrounded by pecan trees. Next time I will add a "little"bourbon or rum flavoring or liquor along with the vanilla. This will jazz it up for the holidays too. You cannot really mess up this recipes as its super simple. Make as written or experiment to your liking. To ensure you get even coating that adheres, roll the balls while warm from the oven in the powered sugar then place the coated balls in the fridge for 30 minutes to an hour to cool. Then repeat rolling in powered sugar. Lastly, make sure you take a couple for yourself as they will disappear before you know it! Thanks for sharing Julie =)
