One time during a hurricane in college, we lost power and I (conveniently) had burgers thawed in no time. I also had some bacon. I decided, along with my friends, that the hurricane wasn't that bad, and that we could start the grill up and get to cooking! We were all starving and really looking forward to eating and having something to do. Well, just as we turned on the grill and put the burgers and bacon on the grill (otherwise it would have gone bad!) it seemed like the hurricane picked up 10 fold! And to top it all off, high winds aren't exactly great when bacon grease hits flames. So we had an out of control fire on our grill (thankfully the lid was closed) and high winds to blow flames everywhere when you tried to open the lid. We had to use a fire extinguisher to put out the fire. So not only were we without power, we also lost our meal. It was quite the fun experience though! I'm sure none of us will ever forget that!

Braised Balsamic Chicken
i thought this was a fantastic dish! i did make some adjustments as i didn't have all the dried herbs on hand. i also just cooked this for 1, myself, and it came out perfect and i ate everything in the pan. i didn't have garlic salt, i just seasoned my chicken breast with a whole bunch of seasonings in my cabinet. i used garlic & herb, caribbean jerk, and poultry seasoning. i didn't have canned tomatoes on hand, i just diced up some cherry tomatoes i had in the fridge- worked perfectly. i also bought some cheap balsamic vinegar- i bought publix brand- and i thought it was fine. not too tangy or anything. i also threw in some diced garlic to the pan when i sautéed my onions. i also added a squeeze of chili pepper paste (its in a tube) that you can find in the veggie section of your supermarket. when i added my chicken breast to the pan and after i added the vinegar, tomatoes, etc., i just threw it in the oven for 10 minutes at 350 degrees. 2 minutes before it came out, i added a thick slice of mozzarella cheese to it (i had the deli section at publix slice me a big piece) and viola! it was fabulous! i even added some fresh basil to it when i put it on my plate and it was delicious. fantastic meal!! will keep this one around! and i think the chili pepper paste added a nice, small, kick of heat to the dish!
