Seasoned Couscous

I think this was a little bit too dry as well - the flavor was good, but nothing out of this world. I think it tasted more like the flavoring you'd get from a flavoring packet that would come with rice or something.

Artichoke and Spinach Swirls

These really were spectacular. Just DELICIOUS. I took them to an event and everyone wanted the recipe! I did do the half sour cream/half mayo as suggested and I threw in some feta cheese as well. Then on a whim the other night, I decided to make them for dinner - so I increased the sour cream/mayo to 3/4 cup and added in about 1.5 cups of finely chopped chicken breast. I also added 1/3 cup parmesan cheese and 1/3 cup feta. I cut them a little thicker (made 24 out of the recipe) and baked them a little big longer, but they were FANTASTIC.

Szechwan Shrimp

Mmmmmm this was delicious! SO much flavor! I ended up throwing some thinly sliced steak leftovers in there too and it was AMAZING. I only used half of the red pepper flakes (my kids don't do spice very well) and it still had a good, strong kick to it. I'll probably have to reduce it even more next time for them. Thanks!

Greek Chicken Pasta

Mmmm, this was delicious! I didn't have any tomatoes so I just threw in a small can of tomato sauce. I also only had artichokes in water so I added a little bit of Italian dressing to the pan as well. Half of my kids liked it and half didn't, but that's pretty typical. :) Will definitely make this one again!

Crispy Orange Beef

I was kind of disappointed with this one - I expected WAY more out of it after reading the reviews! The sauce wasn't all that flavorful - the beef was tough (it had to cook for longer than I normally would cook it for it to get crispy). It wasn't bad at all it - it was good. Just not what I was expecting - if I make this again, I'll be tweaking it quite a bit.

Double Tomato Bruschetta

Chicken and Biscuit Casserole

If I could give this 3.5 I would. The flavor was good - the basil was very unique and I liked it a lot. The consistency left a lot to be desired. It was like eating soup with biscuits on top, and I followed the recipe to a T. Maybe it was supposed to be like that. If so, I wasn't terribly impressed. If I made this again I would cut down on the liquid quite a bit - or add some filler ingredients like potatoes or some other vegetables. We did like it though - it just wasn't as amazing as I expected it to be.

Spicy Chicken and Sweet Potato Stew

Mmmmmmm. This was fantastic! :) A great, unique twist on chili. I used black beans instead of kidney beans and a red pepper instead of a yellow (all I had!) but everything else followed the recipe exactly. I'm so glad I have leftovers! ETA: I just made this with sweet potatoes instead of yams and I think the yams are MUCH better in it. :) They do get mushier (is that word?) but they really kick the flavor up a notch!

Chicken, Cheese, and Biscuits

Mmmmm this was really good! I didn't have any sage so used some thyme and marjoram. We also aren't big green bean fans here so I just added some cooked/cubed red potatoes to the mix. I doubled the recipe as was suggested and I used the flaky layers biscuits, baked for 10 minutes beforehand. The kids loved it which is always a plus! :)

I thought this was going to be really bizarre. I wanted to try it though so took it to my mom's group and we were all AMAZED. It was SO good! Everyone wanted the recipe and there wasn't a bite left. Mmm!

Black Bean and Corn Salad II

This is hands down my favorite salad of all time. Every single time I've made it (which is a LOT), I have been asked for the recipe. I've made it exactly as the recipe states and it's fantastic. I have tweaked it just a tiny bit to suit my needs - I only use 1 tomato because I am not a big tomato fan. I also only use 1/8 cup of olive oil. I also often leave out the avocado. It's FANTASTIC with the avocado, but sometimes I'm just not willing to shell out the money for one. The salad is still amazing without it. :)

D's Famous Salsa

I was all ready with extra spices and seasonings because it didn't seem like this recipe would be enough. I decided to mix it up as directed first to see. And I was pleasantly surprised! It was very flavorful with a little bite to it. I did use green onions instead of white (b/c that's all I had) and I threw in a little bit of extra green chiles but it was really delicious!!!!

Atomic Tuna Salad

Mmmm! This was a great twist on tuna salad. And so healthy to boot! I also used a little bit less broccoli/cauliflower than it called for. I used fat free mayo. The only thing this lacked was a little bit of flavor - I sprinkled in some dill, garlic powder & sea salt and a little bit of red wine vinegar. I just ate it straight from the bowl!

Creamy Spinach Tortellini

This was REALLY good! I also changed it up a bit so couldn't give it 5 stars, but with my mods, I would! I also cut the amount of cream cheese & spinach in half (4 oz. cream cheese and 5 oz. of spinach). I sauteed 3 minced garlic cloves with the onion and added some fresh chopped basil, 1/2 tsp of italion seasoning, and a few dashes of salt. I didn't have any mushrooms or I would have added them and we're not big tomato eaters here so I omitted those as well. Even with reducing the cream cheese, this recipe was still very rich. The next time I make it I will use skim milk instead of 2% and I will add a little bit more of it. I may even cut back on the cream cheese a bit more. But I will definitely make it again! My kids gobbled it up. :)

Shrimp Versailles

This was just ok. I made the recipe pretty much exactly as written - I did add quite a bit of chicken stock and milk to thin the sauce a bit but it didn't seem to help. It was SOOOO THICK - way too thick. It would have been good with probably 1/3 of the cream cheese. Won't be making this one again.

Slow Cooker Cranberry Roast

I've made this for year. It's surprisingly delicious!! I always skim out the onions before making the gravy (my husband hates onions) and I skip adding the butter because I don't think it adds anything. I usually serve it over mashed potatoes. Yum!

Slow Cooker Carnitas

This meat was very tender and good - but it didn't taste at all like carnitas! It just tasted like cooked meat. I agree with another reviewer who said the seasonings just didn't permeate the meat. It smelled amazing though. :)

Seafood Enchiladas

These were pretty good! Nothing outstanding (and honestly, I expected more out of it based on the reviews I read). I'll probably fill up the tortillas more the next time. I made them with both flour & corn tortillas and hubby liked the corn much better. They were good though and I'm sure I'll make these again!

Mmmm this was REALLY good. I wouldn't call it the best ever but it was very tasty and I will definitely make it again. I made a half recipe for our family of 6 and it was plenty! :)
