Sex-In-A-Pan

mmmmmmm! I've made other variations of the "sex in a pan" or "better than sex cake" recipes, but this one is now my favorite by far! I double the crust since I was going to use an 11x14 pan and it was a little bit too thick. I think next time I'd do 1+1/2 the amount for the crust. I also ended up using more whipping cream to cover the whole dessert and added a little bit of powdered sugar to sweeten it slightly. I didn't have wafer cookies so I chopped some Reeses peanut butter cups and sprinkled those on top - to die for!!! Very rich, but I WILL be making it again - you can count on it!

White Chocolate Chip Oatmeal Cookies

These are one of my family's favorite cookies! Nobody in my family likes nuts in baked goods so I omit those. I usually split the dough in half and do one half with 1 cup white chocolate chips and about 1/2-3/4 cup craisins. The other half I do 3/4 cup milk chocolate chips and 3/4 cup peanut butter chips. They are awesome - and totally addicting!

Chocolate Yule Log

Yum - this was REALLY delicious and fairly easy to make! I will definitely make it again. On a side note, make sure you grab your box of powdered sugar and NOT your box of cornstarch by mistake ... just sayin' ... ;)

Kitty Kat Bars

If I were to rate these as copcat Kit Kat bars, they would get a 2. They taste NOTHING like Kit Kats. That being said, they are AMAZING as is! I used all milk chocolate chips because that was all that I had so my review isn't 100% accurate, but made that way, they were delicious and I will most definitely be making them again and again!

Marshmallow Fondant

While I've never attempted to cover a cake, I have used fondant many times to make cake/cupcake toppers and decorations. I've always used store-bought stuff. In an effort to save a few bucks, I decided to try out this recipe. It was perfect! I have no complaints at all. Like another reviewer, I just threw it all in my stand mixer with the dough hook and kneaded it that way. I've been making little dogs for cupcake toppers for my daughter's birthday party this week and they are amazing! Thanks so much for the great recipe - I'll never buy the pre-made stuff again!

Easy Pizza Sauce III

I'm really surprised at all the 4 and 5 star ratings that say "but I added this, this, this and this!" If you have to add anything, then it's not a 5 star recipe. That being said, it's a great base. It definitely needed sugar and salt, though. It was way too bitter without them. I will make it again, with the added ingredients.

The Best Rolled Sugar Cookies

I've been making these for over 3 years now and they are hands down the BEST sugar cookie recipe I've ever had. They are thick and soft and SO so so good!! Paired with a buttercream frosting with some almond extract, these cookies are my biggest weakness. I can't stop eating them!!

Garlic Cheese Chicken Rollups

Yum! This was delicious. I used panko bread crumbs (all I had) and just mixed in some italian seasoning and some garlic powder. I also did what others have done and made my own cream cheese mixture by combining softened cream cheese, minced garlic, onion powder, dried basil, and dried parsley. When DH says that a chicken recipe is "Good" you know you've got a winner. :)

Chili-Crusted Tri-Tip Roast

This was just ok. The meat was very moist and tender but there was just not much flavor at all. I will definitely roast a tri-tip this way again, but will use a different rub or marinade.

Chocolate Cappuccino Cheesecake

I was slightly disappointed in this, although it was very tasty. The filling was very good - smooth and delicious. The whipped cream on top was wonderful. But the crust? It was just ok. It was very hard and difficult to cut through once it was baked. And almost everyone at the party I brought it to did not care for the cinnamon in the crust. It just gave it a strange taste. I think it might have been the combination of chocolate, coffee AND cinnamon. Either way, I will probably make it again but I will try something different with the crust and will definitely eliminate the cinnamon.

Tilapia Soft Tacos with Chipotle Cream

Everything but the fish was fantastic! The fish just tasted kind of blah. It would have been SO much better grilled or seasoned differently. The cilantro sauce was AMAZING though and I'll be using that all the time!

I think this was a little bit too dry as well - the flavor was good, but nothing out of this world. I think it tasted more like the flavoring you'd get from a flavoring packet that would come with rice or something.

Artichoke and Spinach Swirls

These really were spectacular. Just DELICIOUS. I took them to an event and everyone wanted the recipe! I did do the half sour cream/half mayo as suggested and I threw in some feta cheese as well. Then on a whim the other night, I decided to make them for dinner - so I increased the sour cream/mayo to 3/4 cup and added in about 1.5 cups of finely chopped chicken breast. I also added 1/3 cup parmesan cheese and 1/3 cup feta. I cut them a little thicker (made 24 out of the recipe) and baked them a little big longer, but they were FANTASTIC.

Szechwan Shrimp

Mmmmmm this was delicious! SO much flavor! I ended up throwing some thinly sliced steak leftovers in there too and it was AMAZING. I only used half of the red pepper flakes (my kids don't do spice very well) and it still had a good, strong kick to it. I'll probably have to reduce it even more next time for them. Thanks!

Greek Chicken Pasta

Mmmm, this was delicious! I didn't have any tomatoes so I just threw in a small can of tomato sauce. I also only had artichokes in water so I added a little bit of Italian dressing to the pan as well. Half of my kids liked it and half didn't, but that's pretty typical. :) Will definitely make this one again!

Crispy Orange Beef

I was kind of disappointed with this one - I expected WAY more out of it after reading the reviews! The sauce wasn't all that flavorful - the beef was tough (it had to cook for longer than I normally would cook it for it to get crispy). It wasn't bad at all it - it was good. Just not what I was expecting - if I make this again, I'll be tweaking it quite a bit.
