Filipino Spaghetti

My husband is Filipino and really likes this spaghetti. Made a few changes to make it a bit more authentic, like a previous reviewer said. I used tomato sauce instead of spaghetti sauce (the spices in pre-made spaghetti sauce are definitely not Filipino). American hot dogs are indeed too salty for this recipe. If I don't have the red Filipino hot dogs from the Asian market, my husband also likes uncured hot dogs since they have less salt. I left out the water, but it still came out a bit runny, so next time I think I'll use some tomato paste along with the tomato sauce like previous reviewers suggested. All in all, a good recipe that will be made again with stated modifications.

Honey Bran Muffins

Loved these. My husband even said they were good. The test will be if the toddler likes them or not. Used applesauce instead of oil. Didn't have enough raisins, so used some chopped dates and chopped dried apricots to add up to 2 c. of fruit. Also used raisin bran, raisins and all, so they're a bit overly fruity, but still quite yummy. Batter made 12 regular sized muffins, 24 mini muffins and had enough left over to put in a loaf pan for some slices. Used muffin cups, but sprayed them with cooking spray and haven't had a problem with them sticking. Next time I plan to use whole wheat flour and maybe some mini chocolate chips for my toddler (she loves chocolate chip muffins). Can't wait to try all the variations I've read about for these. Definitely a keeper!!

Healthy Banana Cookies

These were great! Loved having a healthy option for cookies. My husband even loved them - snatched a few right out of my hands. I used applesauce instead of the oil. If you do this, make sure to grease the cookie sheet! Going to try to add some spices like other reviewers recommend the next time I make these. I have a feeling these are about to be a common food available at our house.

Zucchini Ranch Meatloaf

Made this last night. It was a hit! Used only 20 oz. ground turkey, no beef. Just shredded one small-ish zucchini and diced half an onion. Omitted the bell pepper because husband doesn't like it. Also, used 2% cheese. Cooked it in a 8" round cake pan in my toaster oven. Still needed about an hour to cook. Loved the flavor combo and husband liked it, too. This one's a keeper!

Easy OREO Truffles

My husband's favorite treat! I use almond bark instead of baking chocolate for the coating. Works great and easier to use. Have made these for many occasions and will make them for many more.
