Pumpkin Cookies V

I am not a fan of pumpkin, so I was making these for friends at bowling. I thought 2 cups of shortening was a lot, but was worried about changing the texture/consistency too much. So I substituted 1 cup of shortening for 1 cup of applesauce (unsweetened).... Everyone LOVED them. I found after adding the icing, that they even got softer. Even though I had them sitting on the counter. I actually really liked them as well, as they weren't too pumpkin'ee'.

Italian Green Bean Chicken

This was just OK. Would not make it again. I did use dried basil instead, but I really don't think that made THAT big a difference. It just wasn't anything special.

Beef and Pepper Pie

I thought this was very good. However I used fresh peppers not "roasted red peppers" which is what I think the recipe called for. Because I didn't have juice from the bottled peppers I did mix up some beef oxo and flour in water and added that to the mixture. I could have thickened it a bit more for our taste.

Asian Asparagus Salad with Pecans

I enjoyed this recipe. Having a cold veggie to bring for a dinner is great, as you don't have to cook something when you get there. With marinating the asparagus it isn't as strong as normal, so even people who don't "like" asparagus, eat it. I confess I overcooked the asparagus a bit, but it was still good.

Asparagus Oregenato

This was WAY over cooked. It was like mush. Unfortunately if you cooked it less the cheese wouldn't cook. Maybe just cooking it for 10 minutes and then broiling it for 3 - 4 minutes, might be the trick. But it was almost inedible. And I only used about 3/4 of a cup of breadcrumbs.

Vegetable Stuffed Cannelloni

This recipe is wonderful. A little bit of work, but I made it ahead of time with pre-cooked cannelloni shells. By the time I went to cook it they had cracked a bit, due to putting hot sauce in them. But it still tasted fabulous

Pumpkin Cream Cheese Muffins

More like a muffin than a cupcake. Too dense for a cupcake... However, they do taste good. Used a piping bag to add the filling.
