Mediterranean Lemon Chicken

I followed some others' advice, and doubled the sauce (but not the oregano). I also baked some cut up potatoes with it, and it all turned out great! The lemon gave the food just enough "zip" without being over-powering. I served this and some peas, and my family ate it up. It's just too bad we don't have any left-overs for tomorrow!

Slow Cooker Spicy Chicken

I made this the other night, and received rave reviews from my family. The only thing I did differently was added a can of enchilada sauce (the tomato taste was just a bit too overpowering for us). It was served with rice, sour cream, and tortillas, which was scrumptious! I have added a new recipe to my rotation, thank you!

Hamburger Steak with Onions and Gravy

I tried this for the first time last night, and it was a big hit with my family. I served it with a side of white rice, but it was suggested that it'd be even better if I served it with mashed potatoes. I followed the advice of others, and did triple the gravy, and was glad I did! I've been asked to make this dish again.

Lemon Pudding Poke Cake

I made this for the recent July 4th celebration and got rave reviews from everyone. It's moist and delicious, with just the right amount of lemon flavor without being too tart. I used half a container Cool Whip to "ice" the top after it had chilled overnight. Also, make SURE you cover it in the refrigerator, because it will dry out quickly. I will make this again!

Baked Teriyaki Chicken

This was very nummy; quite the hit with my family. The only suggestion that I would make is to definitely line your baking dish with foil (I greased the dish, but still had a petrified layer of Teriyaki sauce that took a lot of soaking and scrubbing to remove).

Souper Simple Mac 'n' Cheese

This delivered exactly as promised--"souper simple". It was easy to toss together, and the whole family gave it rave reviews. All I did extra was toss in a sprinkle of garlic salt and some pepper.

Cherries in the Snow Cake II

I made this for our Holiday dessert, and it was a great hit! The main thing with the filling is that you really really have to mix the cheese well before adding the whipped topping so it's not "gloppy". And yes, the cherry topping DID have a different color than fresh from the can, but we did not think it took anything away from the dessert. It was definitely sweet, though. We had a glass of ice-cold milk to help wash this dessert down. I've gotten many requests for the recipe!

Soft Christmas Cookies

I just made these with my daughter and they turned out pretty good. I followed others' advice and used 3 cups flour, and baked at 350. The dough turned out a bit sticky for cut-out cookies, but once we just started making drop cookies, things went much quicker. Whether the cookies were shaped or not, they tasted great!

Tuna Fish Cakes

On an evening when I was running home late, I discovered that I had no plan for dinner and decided to make this. I took out the carrots and added onions like others had suggested, and they turned out pretty good. They kinda taste like tuna fish sandwiches.

Watermelon Lemonade

I brought this to a bbq as a change from all the sodas and beer. Yes, it's a bit of work (especially since my fine sieve is very small! LOL), but I think it was worth it. I simply brought it "as is" and some vodka like Docswife suggested--the children could enjoy it, and the adults could add a little "something extra" if they wanted to. I ended up bringing home an empty pitcher!

A wonderfully sweet and tangy summertime dessert! Very easy to make; the quick prep and bake time allowed me to complete a batch before the heat of the summer day kicked it. I will definitely make these again!

Annemarie's Lemon Bars

I have never made any lemon bars before, but I'm glad I tried these. After reading others' reviews, I took off 5 minutes of bake time for the crust and doubled the filling amounts. After having a bit of an issue getting the filling to set (I had to cook it a bit longer than instructed due to, I think, the extra filling), I was able to enjoy this delightfully sweet, yet tart dessert. It was a hit at our Cinco de Mayo party--a great way to curb the "burn" off all the spices! I will be making this again.

Tortillas II

This was the first time I've ever made my own tortillas, but they turned out great! By the time I had used all the dough, I had the process down pretty good. I did have to turn the heat down to medium though, because they tried to scorch on the higher setting. My daughter loved helping me cook these!

Mheh. Even after browning onions and garlic in the butter and adding spices to "bam it up a notch", it still tasted pretty bland. The kids liked it, but the hubby wasn't impressed.
